The Olde Mecklenburg Brewery (OMB) is a historic and vibrant staple in Charlotte, North Carolina's craft beer scene. Established in 2009, OMB has steadfastly adhered to the German Purity Law of 1516, known as Reinheitsgebot, which dictates that every beer is brewed using only four essential ingredients: water, barley, hops, and yeast. This commitment to tradition and authenticity is not just about brewing beer; it's about capturing a heritage that influences every aspect of their operations. In Spring 2024, the brewery expanded its footprint by opening a second location in Ballantyne, a large, two-story 14,000-square-foot restaurant and biergarten designed to serve an even broader spectrum of the community. With a robust distribution network across North Carolina through independent wholesalers, OMB has cemented its reputation as a leader in the regional brewing industry. The Sous Chef role at The Olde Mecklenburg Brewery is a pivotal position that supports the overall vision of delivering exceptional culinary experiences aligned with the brewery’s ethos of quality and tradition. Reporting directly to the Executive Chef, the Sous Chef plays a critical leadership role within the kitchen, spearheading the culinary team to ensure that every dish served exceeds OMB's exacting standards. This salaried position is based in the vibrant LoSo neighborhood of Charlotte and involves managing the Brauhaus restaurant, catering services, and special events.
The ideal Sous Chef will be both a mentor and a manager, leading the kitchen with professionalism and passion. They are responsible for maintaining the highest standards of recipe fidelity, food preparation, plating, and presentation. The role demands a strong leader with excellent organizational and communication skills, capable of conducting staff training, performance reviews, and if necessary, disciplinary actions, all while fostering a positive work environment.
Additional responsibilities include maintaining a safe and sanitary kitchen environment, operating as an expeditor during busy periods to ensure smooth service flow, and collaborating closely with the Executive Chef to communicate daily line-ups and preparation schedules. The Sous Chef also partners with the Service Team to coordinate opening and closing procedures, stocks and controls kitchen stations, manages staffing levels effectively throughout shifts, and upholds OMB's rigorous safety and emergency protocols.

- Culinary degree or 3 years of culinary training at a high-volume food establishment
- ServeSafe certified, or willing to certify within 1 year
- Computer skills including Microsoft Word, Excel, and culinary reporting software
- Flexibility to work weekends and holidays
- Ability to lift up to 50 pounds
- Interest in craft beer
- Positive attitude and ability to build good working relationships
- Excellent written and oral communication skills
- Strong listening skills
- Strong leadership skills and ability to manage a variety of employees with varied backgrounds

Job Duties
- Provide professional leadership and direction to the culinary personnel
- Ensure that all recipes, food preparation, plating, and presentation meet OMB's specifications and quality standards
- Coach, counsel, and assist in conducting performance evaluations and reviews for staff
- Recommend or conduct disciplinary action, including termination of culinary staff when necessary
- Maintain a safe, orderly, and sanitized kitchen
- Operate as an expeditor during peak times
- Collaborate with the Executive Chef to prepare and communicate daily line-ups to all Brauhaus staff
