The role is a pivotal position responsible for overseeing all aspects of brew pub operations during assigned shifts. The ideal candidate will uphold operational standards, including timely ticket processing, meticulous sanitation procedures, food safety adherence, and exemplary plate presentation. They will actively contribute to maintaining organized and safe kitchen and storage areas, which include the dish room, downstairs pantry, walk-in coolers, and the upstairs kitchen. Collaboration is key in this role, with responsibilities extending to assisting with event planning and promotions alongside other restaurant management and event staff.
Leadership development is also a critical component, as this role involves hiring, training, coaching, and disciplining kitchen staff to foster a team aligned with our service and quality standards. The individual will lead by example, conducting staff evaluations, interviews, department meetings, and participating in daily communication sessions with both front-of-house (FOH) and back-of-house (BOH) teams.
Strong reporting and control capabilities are essential to this position. Responsibilities include participating in manager meetings, completing labor-related paperwork, auditing shifts for attendance accuracy, performing monthly food inventory, inspecting incoming orders, minimizing waste, and managing food costs effectively. The person in this role ensures compliance with sanitation and safety regulations through diligent inspections at the end of each shift.
Educationally, candidates are preferred to have an associate degree or equivalent in a related field. Experience-wise, three to five years in the restaurant or hospitality industry with a focus on from-scratch cuisine is highly desirable. Additionally, candidates must hold a ServSafe manager certification and possess proven management experience along with strong problem-solving and multitasking skills. Flexibility to work nights and weekends is required.
Preferred qualifications include familiarity with Appreciative Inquiry techniques, Lean principles focusing on process improvements, and a robust knowledge of the craft beer industry. Job Duties
- Responsible for maintaining all operations standards during their shift including ticket times, sanitation, plate presentation and food safety
- Diligently ensures that we are always serving safe food
- Updates and reads the manager log every shift
- Ensures the sanitation, maintenance and organization of the kitchen, dish room, down stairs pantry, walk-in coolers and the upstairs kitchen
- Assist with planned events and promotions in conjunction with other restaurant managers and Events staff
- Assists in establishing pars and ensures we carry a responsible amount of product
- Collaborates with team on menu offerings
- Assists in creating and rolling out daily specials
- Provide and maintain a safe and secure working environment
- Assists in hiring, training, development and discipline of the kitchen staff
- Teach and coach team members throughout the shift on standards, quality and creativity
- Conducts quarterly check-ins and annual reviews with the BOH staff
- Conducts interviews for kitchen staff
- Assists in conducting department meetings to revisit policies and procedures and connect with the staff
- Participates in daily Q-Times with FOH and BOH staff
- Participates in the weekly manager meeting as needed
- Accurately completes paperwork pertaining to labor and necessary documentation for accounting
- Audits labor at the end of each shift to make sure everyone is properly clocked in and out
- Conducts monthly inventory of all food items
- Receives and inspect incoming orders
- Responsible for keeping waste at a minimum and keeping food costs in line
- Inspects the entire kitchen at the end of each shift to insure sanitation levels are being met
- Other duties and tasks as assigned
