The role of Sous Chef at Giant Eagle is a pivotal position within the kitchen and culinary operations team. The Sous Chef will play a multifaceted role, assisting in the ordering of materials and supplies, menu planning, inventory management, and executing sanitation, cost control, and quality control programs. This position involves directing and coordinating the kitchen’s daily operations and team members to ensure smooth service and customer satisfaction. The Sous Chef is instrumental in stimulating the growth of the business by offering innovative culinary ideas that meet or exceed customer requirements while maximizing company profits. This role also serves as a leadership position, stepping in for the Executive Chef, Kitchen Manager, or Prepared Foods Team Leader when necessary, providing critical supervision and oversight in the kitchen.

In addition to operational responsibilities, the Sous Chef contributes to training and developing kitchen Team Members, ensuring adherence to safety standards including food safety and overall Team Member and customer safety. The role demands excellent food preparation skills, product knowledge, and customer service abilities. The ideal candidate will have prior management experience in the culinary field, extensive prep cook experience, and awareness of food safety practices. This position calls for an individual who can maintain quality and sanitation standards through physical and visual inspections and who can effectively manage departmental records and inventories to control costs and increase profitability.

The Sous Chef’s duties further include coordinating schedules, preparing cooking lists, conducting feedback evaluations, and monitoring equipment needs to support food presentation and safe handling. The role requires maintaining compliance with federal, state, county, and company regulatory mandates. This position also involves daily regional travel commitments and requires lifting up to 50 pounds, emphasizing the physical and dynamic nature of the work environment.

Job Requirements

Job Duties

  • Assign coordinate and evaluate work of kitchen team members by writing schedules preparation lists cooking times and feedback evaluations
  • Maintain accurate department records by using HACCP charts cooling charts cooking temperature sheets holding temperature sheets refrigeration temperatures charts and thermometer calibration charts
  • Control departmental costs by monitoring waste and keeping completed waste logs to increase company profitability and adhere to departmental budget
  • Manage food and controllable inventories by taking actual weekly and monthly inventories and tracking inventory reports
  • Review financial transactions and monitor departmental budgets by keeping up to date purchase logs labor estimates and reviewing projections and profit and loss statements
  • Inspect equipment requirements to ensure the company has needed equipment for presentation transportation and safe handling of food production
