The role of Sous Chef at GreatHorse is a pivotal position within the culinary team. The Sous Chef acts as the second in command of the kitchen, supporting the Executive Chef and Senior Sous Chef by overseeing all food production activities for the club’s dining outlets, banquet events, and special functions. This role demands expertise in culinary operations, leadership skills, and a commitment to maintaining the highest standards of food quality, presentation, and consistency. The Sous Chef will regularly supervise kitchen staff, ensure compliance with health and sanitation standards, assist with inventory management, cost controls, and food purchasing, and take full kitchen operational responsibility in the absence of senior chefs. The position requires flexibility, including availability for night, weekend, and holiday shifts, reflecting the dynamic nature of food service in a vibrant club environment.

Candidates for the Sous Chef position should have considerable experience in high-end restaurant, hotel, or country club culinary operations, exhibit strong leadership and communication abilities, and possess knowledge related to menu development, food costing, and inventory management. Culinary certifications are preferred, further demonstrating the candidate’s capacity to maintain excellence in food preparation and kitchen management. The job entails physical demands, including prolonged standing, walking, and manual dexterity, and expects a positive attitude and teamwork orientation from all candidates. Job Qualifications

  • Understanding of food safety and sanitation regulations
  • Ability to remain calm and professional in a fast-paced work environment

Job Duties

  • Prepare or directly supervise kitchen staff responsible for daily food preparation ensuring all cooking methods garnishing presentation and portion sizes meet established recipes and quality standards
  • Assist the Executive Chef and Sr Sous Chef with monthly inventory management pricing cost controls purchasing requisitioning and food production oversight
  • Assume full responsibility for kitchen operations in the absence of the Executive Chef and Sr Sous Chef
  • Support the Executive Chef and Sr Sous Chef in supervising training and developing kitchen staff while ensuring compliance with sanitation and safety standards
  • Consistently maintain high standards of food quality presentation taste and consistency
  • Recommend maintenance repair and upkeep needs for kitchen facilities and equipment
  • Prepare reports schedules menu costing and other administrative tasks as assigned by the Executive Chef and Sr Sous Chef
