North Italia is currently hiring for the Sous Chef position, an essential leadership role in the kitchen responsible for supporting the Executive Chef and managing culinary team operations. Reporting directly to the Executive Chef, the Sous Chef plays a critical role in managing kitchen shifts, scheduling, daily decision-making, and ensuring that every dish meets the highest standards for quality, flavor, and presentation. This role demands deep ingredient knowledge, culinary expertise, and the ability to innovate while maintaining cost controls and contributing to financial goals.

Job Requirements

  • Able to work ten-hour plus shifts
  • Ability to stand, sit, squat, or walk for extended periods
  • Must be able to work closing shifts, weekends, and holidays as needed
  • Able to grasp, reach overhead, push, lift, and carry up to 50 pounds
  • Finger and hand dexterity to operate kitchen machinery and knives
  • Ability to withstand changes in temperature, occasional smoke, steam, and heat
  • Must have hearing, visual, and sensory abilities to observe and detect emergencies
  • Ability to distinguish product taste, texture, temperature, and presentation

Job Qualifications

  • 2 plus years of high-volume culinary management experience
  • Demonstrated working understanding of business operations and financials
  • Experience with POS systems and inventory control systems
  • Prior POSitouch and Crunchtime experience is a plus
  • Strong leadership and communication skills
  • Ability to work in a fast-paced environment
  • Knowledge of culinary trends and ingredient applications

Job Duties

  • Manage shifts which include daily decision making, scheduling, and planning
  • Demonstrate ingredient knowledge and understanding of culinary trends
  • Control cost of goods and find solutions when targets are not met
  • Maintain kitchen cleanliness, organization, and equipment care and maintenance
  • Manage labor expectations and plan each scheduled shift accordingly
  • Foster an environment of continuous learning, open and honest feedback, and corrective action as needed
  • Demonstrate knowledge and awareness of sales and labor budgets and discuss profit and loss with management team
