The position of Sous Chef Carlo and Johnny is a pivotal role within this esteemed company, supporting the Executive Chef in managing a team of culinary professionals to deliver a fine dining experience that aligns with Jeff Ruby's high standards. The Sous Chef is responsible for ensuring that all food products meet quality benchmarks and that their preparation adheres to established food and labor cost parameters. This role requires a leader who can maintain cleanliness and compliance with health department guidelines, coordinate with senior kitchen staff to review operational plans, and assist in various cooking and supervisory tasks as needed. The Sous Chef will also produce production lists to optimize service execution, manage staff schedules, maintain detailed menu knowledge, and ensure consistent food presentation.
In addition to culinary expertise, the Sous Chef plays a significant role in enforcing sanitation and health regulations, equipment maintenance, and department policies. This role serves as a supervisory figure in the absence of the Executive Chef and Chef de Cuisine, demonstrating flexibility and the ability to work across multiple kitchen stations. The Sous Chef also leads training initiatives for master cooks, cooks, and dishwashers to uphold high standards and improve team skills. Job Requirements
- high school diploma, college degree preferred
- ability to stand and walk during 6 to 8 hour shifts
- ability to reach, bend, stoop, and wipe
- ability to lift and carry supplies and equipment up to 60 pounds and place items on high and low shelves in storerooms and freezers
- ability to work in an environment subject to varying levels of heat and noise
- ability to work in a high pressure environment
Job Qualifications
- two years of food and beverage experience in a similar high-volume environment
- advanced knowledge of knives and knife skills
- advanced knowledge of kitchen equipment including slicing machine, juicer, Cryo-vac machine, small wares equipment
- advanced knowledge of health, safety and sanitation procedures
- advanced knowledge of weights, measures and various cooking techniques
- professional appearance and demeanor
- excellent written and oral communication skills
- computer proficiency in Microsoft Office Suite
- comprehension of English oral and written language
- strong coaching and development skills
- ability to produce a high volume of work accurately and timely
Job Duties
- maintain cleanliness in compliance with company standards and health department guidelines
- meet with Executive Chef and Chef de Cuisine to review assignments, anticipated business levels, changes and other information pertinent to the job performance
- assist Executive Chef, master cooks, cooks, and helpers wherever required to ensure optimum service to guests
- produce production list to ensure efficient execution of service
- create and maintain staff schedule and requests
- maintain an exceptional menu knowledge and attention to detail with plate presentation
- prepare both hot and cold items and demonstrate a variety of cooking techniques
