The role of Assistant Executive Chef is pivotal within the kitchen leadership team, tasked with aiding the Executive Chef in overseeing daily kitchen operations while ensuring compliance with the company’s high standards in food preparation and guest service. The incumbent will take charge of supervising kitchen personnel, overseeing menu production, recipe execution, and staff training, as well as managing costs and budgets to optimize operational efficiency. A strong emphasis is put on developing team members through coaching and evaluation while fostering a safe, inclusive workplace that adheres to all safety and health protocols including OSHA and MSDS guidelines. Additionally, the Assistant Executive Chef plays an integral role in executing sustainability initiatives under the company’s EarthView program, showcasing a dedication to environmentally responsible practices. This full-time position offers a diverse work schedule involving holidays and weekends and requires physical stamina to handle the demands of a fast-paced, dynamic kitchen environment. Job Requirements
- Degree or certification from an accredited culinary program preferred
- 3 years experience in a managerial position of an upscale and/or high volume food service establishment required

Job Duties
- Interview, select, train, schedule, coach and support associates, ensuring they perform in accordance with established brand or hotel standards and consistent with HHM core values
- Oversee preparation and production of menus, development and execution of recipes
- Manage kitchen operations and assigned staff
- Ensure staff prepares menu items following recipes and yield guides, in accordance with department standards
- Develop new menu items, test and create recipes
- Train, develop and evaluate personnel with regard to proper use of standard kitchen equipment and tools, techniques and skills
- Supervise kitchen personnel to ensure that methods of cooking, garnishes and portion sizes are as prescribed
