The role of the Sous Chef at Trump National Golf Club is a critical leadership position within the culinary team, working directly under the guidance of the Executive Chef. This position focuses on preparing, producing, and presenting high-quality food products that consistently exceed guest expectations. The Sous Chef is charged with overseeing all aspects of food preparation, food presentation, sanitation, and kitchen operations to uphold the club's standards of excellence. A primary responsibility includes training kitchen staff on proper sanitation guidelines, ensuring compliance with California Health Department regulations, and maintaining a clean and orderly kitchen environment.
The Sous Chef plays a vital role in managing labor costs by ensuring adherence to staff schedules and meal breaks, as well as assisting with staffing for special events such as weddings, golf outings, and banquet functions. They assist the Executive Chef with inventory management, purchasing, and receiving of goods, ensuring accuracy and efficiency in all transactions. The Sous Chef's expertise in kitchen procedures, food operations, and culinary techniques enables them to support the development of new menu items, daily specials, and promotional offerings that drive revenue growth.
This position requires hands-on involvement in daily kitchen duties, including supervising food preparation to guarantee accuracy and consistency in recipes and presentation. The Sous Chef also oversees kitchen equipment maintenance with support from the maintenance department and enforces employee policies as outlined in the Employee Manual. Additionally, the Sous Chef may be responsible for creating work schedules, incorporating safe work practices, attending staff meetings, and filling in for the Executive Chef when necessary.
The ideal candidate for this role has a combination of culinary education and 2-3 years of verifiable experience in a professional kitchen environment. Strong problem-solving skills, a keen understanding of food safety practices, and the ability to lead and motivate a team are essential. Physical demands include standing for extended periods, lifting moderate weights, and working in varying temperature conditions typical of a commercial kitchen.

Job Requirements

Job Duties
- manage all food operations including cuisine, cleanliness, food preparation, and presentation at the direction of the Executive Chef
- provide direction, leadership, and training to all kitchen and hourly food and beverage staff
- maintain kitchen cleanliness and enforce uniform and hygiene regulations per California Health Department
- manage and maintain kitchen equipment with assistance from maintenance department
- direct and assist in food preparation ensuring cleanliness, technique, recipe accuracy, and consistency
- train all staff on policies and procedures from Employee Manual
- ensure proper staffing levels for special events, weddings, golf outings, and regular business
- assist with ordering and purchasing via approved vendors
- assist in planning and executing banquet events
- receive purchased items and verify accuracy in delivery and pricing
- assist in food preparation and presentation ensuring quality and consistency
- develop fresh menu items, daily specials, and promotions
- manage daily inventories for regular and special events
- create staff schedules considering shift requests, vacations, and availability
- incorporate safe work practices
- attend staff meetings
- assist in preparation of family meals
- fill in for Executive Chef when necessary
- resolve issues and report to Executive Chef immediately
- perform other duties as assigned
