The role of Sous Chef at Crystal Mountain is a unique culinary position within the Food & Beverage department, reporting to the Executive Sous Chef and Executive Chef. This full-time, seasonal, non-exempt position based at Crystal Mountain, WA, commands a competitive pay range of $26 to $30 per hour. It is designed for a culinary professional who thrives in fast-paced, high-volume kitchen environments across multiple on-mountain venues. The ideal candidate must be versatile, confident in stepping into different kitchen settings and leadership roles, and comfortable skiing or snowboarding to reach various mountain locations as needed.
As a Sous Chef, you will support Executive Chefs by executing kitchen functions such as food preparation, cooking, inventory management, and sanitation. You will handle diverse menus and uphold high culinary standards in both full-service and high-volume settings. Leadership is a key aspect of this role, including mentoring kitchen staff, training team members, promoting kitchen safety and cleanliness, enforcing food cost controls, and ensuring smooth kitchen operations during the Executive Chef's absence.
Additionally, this role requires a positive attitude, impeccable professionalism, and effective communication skills to foster a healthy and efficient work environment. Maintaining adherence to recipes, portion control, and presentation standards is essential, as is coordination with management regarding disciplinary actions and operational issues. The ability to use Microsoft Office for ordering, costing, and accounting purposes is also required.

Job Requirements
- High school diploma or equivalent
- At least 3 years' experience in Food & Beverage
- Minimum of 1 year in culinary back of house management or demonstrated progressive leadership skills
- Ability to ski or snowboard proficiently (intermediate level or higher)
- Serv Safe certification or ability to obtain
- Willingness to work evenings, weekends and holidays
- Physical ability to lift 50 pounds occasionally
- Ability to work in fast-paced kitchen environments
- Strong communication and team leadership skills
- Familiarity with Microsoft Office for ordering and accounting purposes
Job Qualifications
- At least 3 years' experience in Food & Beverage
- Minimum of 1 year in Culinary BOH management or documentation of progressive leadership skills
- Strong culinary skills across multiple cuisines and service styles
- Ability to ski or snowboard proficiently (intermediate level or higher)
- Familiarity with Microsoft Office and experience with ordering, costing, and accounting for kitchens
- Serv Safe certification or ability to obtain and or WA Food Handlers Permit
- Ability to work varying shifts, weekends and holidays
Job Duties
- Support Executive Chefs across multiple venues, adapting quickly to different kitchen environments and team dynamics
- Execute all kitchen functions including prep, cooking, inventory, and sanitation
- Learn and master a variety of menus
- Maintain high culinary standards while working in both high-volume and full-service settings
- Ski or snowboard on-mountain venues as needed, safely and reliably
- Step into leadership roles when needed, ensuring smooth kitchen operations in the absence of the Head Chef
- Train and mentor kitchen staff across venues
- Uphold food safety and cleanliness standards in all environments
- Demonstrate an upbeat, positive attitude and act and communicate in a professional manner while ensuring BOH staff is properly trained
- Promote a healthy and efficient environment through work ethic and staff engagement
- Ensure recipes are adhered to and produced consistently and safely as well as monitor food portioning, preparation, presentation, and waste to control costs
- Coordinate with Executive Chef on all disciplinary actions with proper documentation, training and guidance in a positive professional manner
- Report any equipment malfunctions or breakage to facilities using ticket system to resolve the issue promptly
- Assist in performing all inventories to ensure that all products are accurately counted and recorded
- Abide by and uphold overall customer service, kitchen and food concession service standards and give support to all kitchen operations as well as any FOH needs
- Adhere to all policies, standards, SOP's and training as directed by the Resort Executive Chef
