Job Description

Fleming's Prime Steakhouse & Wine Bar is a distinguished dining establishment founded in 1998 by restaurateurs Paul Fleming and Bill Allen. The first restaurant opened in Newport Beach, California, with a vision to create a unique steakhouse experience that prioritizes generous hospitality, an inviting atmosphere, and the very finest aged USDA Prime beef. Over the years, Fleming's has grown to become a leading choice in the upscale dining sector, known for its inspired service and expertly prepared prime steaks. This reputation is further enhanced by an exceptional selection of wines, allowing guests to explore and enjoy a comprehensive food and wine experience.

Rooted deeply in its core Principles & Beliefs, Fleming's fosters a passionate team culture that supports, encourages, engages, and celebrates its employees. The company places great importance on creating a positive work environment where team members can learn, grow, and advance their careers through first-class training programs. This focus on excellence and employee development ensures that every guest visit is not only a memorable celebration of food and wine but also an experience marked by personalized service.

The role of the Sous Chef at Fleming's Prime Steakhouse & Wine Bar is critical in fulfilling the company’s promise of delivering superior food, wine, and hospitality. As a key leader in the kitchen, the Sous Chef is responsible for maintaining high-quality employee standards by helping to keep the kitchen fully staffed, fostering inclusivity, developing kitchen associates, and holding the team accountable in a supportive manner. This leadership role demands a hands-on approach to supervising food production areas to maximize productivity and minimize waste. The Sous Chef ensures strict recipe adherence, manages line checks, testing, cooking times, and expo operations to uphold Fleming's renowned menu quality and presentation.

In addition to culinary oversight, the Sous Chef is charged with implementing effective security protocols to safeguard employees and guests, and enforcing safety and sanitation practices that contribute to immaculate kitchen facilities. The role also embodies Fleming’s Principles & Beliefs by promoting a culture of fun, respect, and balance for all team members. The ideal candidate will find pride in presenting quality food and will be an ambassador of Fleming’s commitment to a positive, engaging workplace.

The position requires flexibility with scheduling and is suited for professionals with at least two years of experience in kitchen supervisory or management roles, preferably within polished casual or fine dining settings. Fleming's offers a competitive compensation range that varies by location and is based on a 45-hour workweek, which includes 40 hours of regular time and 5 hours of overtime. The company values diversity and is committed to equal employment opportunities regardless of race, color, religion, sex, national origin, age, disability, veteran status, sexual orientation, or other protected characteristics.

For those seeking a rewarding culinary leadership position within a prestigious steakhouse brand that lives, breathes, and dreams steak and wine, Fleming's Prime Steakhouse & Wine Bar provides an unmatched environment to thrive and contribute to a celebrated dining experience.
