This role focuses on the management and oversight of the hotel’s culinary team and kitchen operations. The successful candidate will be accountable for planning and managing the kitchen staff involved in the procurement, production, preparation, and presentation of all food served throughout the hotel. This includes restaurants and room service. The primary objective is to ensure that all food products meet or exceed quality standards while maintaining a safe and sanitary work environment in compliance with federal, state, corporate, and franchise regulations. The role is critical in achieving profitable, competitive, and quality product outputs that align with the hotel’s brand and franchise standards.
The position also demands strong leadership in human resources activities concerning kitchen staff such as interviewing, hiring, scheduling, training, motivating, coaching, and conducting performance evaluations. Maintaining a positive and safe workplace is paramount. The manager will take charge of kitchen maintenance and sanitation, managing labor and food costs with detailed tracking and reporting to ensure budget adherence without sacrificing quality. Additionally, the position involves assisting the Executive Chef in menu creation and costing and assuming the Executive Chef’s responsibilities during their absence. The successful candidate must demonstrate excellent communication skills and leadership abilities to inspire their team and deliver optimal results under time constraints. - Five plus years of employment in a related position

Job Qualifications
- Two plus years of post-high school education, culinary education is desirable
- Five plus years of employment in a related position
- Hotel experience preferred
- Advanced knowledge of principles and practices within the food profession
- Knowledge of hotel operations including marketing plans, security and safety programs, personnel and labor relations, business plans, repairs, maintenance, budget forecasting, quality assurance, hospitality law, and long-range planning
- Leadership skills to motivate and develop staff
- Ability to work effectively under time constraints and deadlines
- Effective verbal and written communication skills with ability to adapt communication style to different audiences
Job Duties
- Manage the daily production, preparation, and presentation of all food for the hotel's restaurant(s) and room service to ensure a quality, consistent product
- Manage human resources in the production and preparation areas of the kitchen including interview, hire, schedule, train, develop, empower, coach, counsel, recommend discipline and termination
- Schedule and manage the maintenance and sanitation of the kitchen, equipment, and related areas to ensure a healthy and safe work environment
- Monitor, analyze and control all labor and food costs, prepare reports, charts, and schedules to ensure budgets are met or exceeded while maintaining quality
- Promote the Accident Prevention Program to minimize liabilities and expenses
- Assist the Executive Chef in the creation, costing and implementation of seasonal and special menus
- Assume the responsibilities of the Executive Chef in his or her absence
- Comply with attendance rules and be available to work on a regular basis
- Perform other job-related duties as assigned
