The Sous Chef position plays a crucial role in the success of the food program by supporting the Executive Chef and overseeing daily kitchen operations. This full-time role offers an hourly wage ranging from $27.00 to $30.00 and operates Monday through Friday from 6:00 am to 2:30 pm. The position requires the Sous Chef to ensure compliance with OSHA, Health Department regulations, and internal standards specific to ISS and Guckenheimer. Core responsibilities include managing recipe execution, production schedules, food purchasing, sanitation, safety, and staff development.
The ideal candidate will be responsible for maintaining kitchen organization and cleanliness to promote a safe environment for personnel and guests alike. They must strictly follow workplace safety, food safety, HACCP guidelines, and internal audit protocols daily. This individual will be integral in maintaining high culinary standards, adhering to Guckenheimer's food quality benchmarks, and assisting with administrative duties related to human resources and compliance.
Additional tasks involve monitoring HACCP logs, assembling ready-to-eat menu items in line with standardized recipes, ensuring sustainable waste disposal, and performing monthly inventories in conjunction with management. The Sous Chef also supervises and trains kitchen staff, enforces uniform standards, participates in performance reviews, and supports a culture of continuous learning and improvement.
Customer service is paramount in this role as the Sous Chef represents the company with courtesy and professionalism, addresses customer concerns tactfully, and maintains clear, timely communication with clients. Financial oversight includes monitoring labor costs against budget forecasts, assessing food cost targets, and adjusting practices to meet budgetary goals.
Furthermore, the Sous Chef is tasked with maintaining the appearance and presentation standards of the café, including overseeing décor, menu signage, and overall cleanliness to create an inviting dining environment. Physically, the role requires standing for extended periods, handling physical workload safely, and complying fully with Health, Safety, Environment, and Quality (HSEQ) policies.

Job Requirements
- High school diploma or equivalent
- Minimum of 2 years experience in a professional kitchen setting
- Knowledge of OSHA, Health Department, and HACCP regulations
- Ability to stand for long periods and perform physically demanding tasks
- Effective teamwork and leadership abilities
- Availability to work Monday through Friday, 6:00 am to 2:30 pm
- Willingness to comply with company dress code and safety standards
- Positive attitude towards diversity and inclusion
Job Qualifications
- Proven experience as a sous chef or similar culinary role
- Strong knowledge of food safety regulations including HACCP
- Experience in food preparation and kitchen management
- Ability to supervise and train kitchen staff
- Effective communication and leadership skills
- Familiarity with budgeting and inventory management
- High school diploma or equivalent
- Culinary certification or degree preferred
Job Duties
- Provide highest quality of service in line with ISS/Guckenheimer and client standards
- Utilize food preparation procedures complying with federal, state, and local regulations
- Assist Executive Chef with administrative duties including attendance and human resources
- Monitor and review HACCP logs
- Assemble ready-to-eat menu items according to standardized recipes
- Clean and sanitize work areas and equipment complying with ISS/Guckenheimer and regulatory standards
- Support management with monthly inventory
- Notify management of concerns regarding product quantities, food/equipment safety, or other issues
- Attend all daily meetings
- Report all accidents and injuries promptly
- Perform other assigned duties as needed
