Job Description

The University of Wisconsin at Green Bay is currently seeking a dedicated and experienced Sous Chef to join its dynamic culinary team. Job Requirements

  • Prior culinary experience
  • Ability to work full time with rotating schedule including weekends and evenings
  • Valid food handler certification or ability to obtain
  • Ability to lift and stand for extended periods
  • Strong organizational and leadership skills
  • Ability to communicate effectively with team and customers
  • Willingness to perform other duties as assigned

Job Qualifications

  • Culinary experience in a professional kitchen setting
  • Experience supervising food service associates
  • Knowledge of food safety and sanitation regulations
  • Ability to manage inventory and control waste
  • Strong communication and customer service skills
  • Ability to work rotating schedules including weekends and evenings
  • Familiarity with production orders and menu preparation standards

Job Duties

  • Cooks and prepares food following approved recipes and production standards
  • Ensures all deadlines are met based on production orders
  • Supervises hourly food service associates including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action as appropriate
  • Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures
  • Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
  • Maintains sanitation of equipment, supplies and utensils, cleans workstation thoroughly before leaving area
  • Interacts with customers to resolve complaints in a friendly, service-oriented manner
  • Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers
  • Keeps up with peak production and service hours
  • Monitors inventory and deliveries of product and supplies
  • Tracks product production, consumption and waste
  • Informs supervisor when supplies or product are low
  • Performs other duties as assigned
