The University of Wisconsin at Green Bay is currently seeking a dedicated and experienced Sous Chef to join its dynamic culinary team. The Sous Chef at the University of Wisconsin serves as a critical member of the kitchen leadership team, supporting the Executive Chef in food preparation and kitchen operations. This role is designed for a professional who thrives in a fast-paced culinary environment and has a strong foundation in cooking and kitchen management. Responsibilities include preparing meals according to approved recipes and production standards while ensuring the highest quality and safety standards are met. The Sous Chef supervises and coordinates activities of cooks and other food-service associates, including interviewing, scheduling, training, and performance management. The role entails maintaining proper food handling, presentation, and portion control, as well as ensuring food is served at appropriate temperatures.
In this role, the Sous Chef also oversees sanitation and cleanliness of equipment, supplies, utensils, and the workstation, ensuring compliance with corporate, state, and federal food safety regulations. Managing inventory and monitoring deliveries are key responsibilities for optimizing kitchen operations and minimizing waste. Job Requirements
- Prior culinary experience
- Ability to work full time with rotating schedule including weekends and evenings
- Valid food handler certification or ability to obtain
- Ability to lift and stand for extended periods
- Strong organizational and leadership skills
- Ability to communicate effectively with team and customers
- Willingness to perform other duties as assigned

- Familiarity with production orders and menu preparation standards
Job Duties
- Cooks and prepares food following approved recipes and production standards
- Ensures all deadlines are met based on production orders
- Supervises hourly food service associates including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action as appropriate
- Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures
- Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
- Maintains sanitation of equipment, supplies and utensils, cleans workstation thoroughly before leaving area
- Interacts with customers to resolve complaints in a friendly, service-oriented manner
- Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers
- Keeps up with peak production and service hours
- Monitors inventory and deliveries of product and supplies
- Tracks product production, consumption and waste
- Informs supervisor when supplies or product are low
- Performs other duties as assigned
