This opportunity is for the role of a Sous Chef within Lantern Hill’s innovative culinary operation. The Sous Chef will play a pivotal role in supporting the culinary team with a focus on delivering quality dining experiences through Erickson's Signature Dining Programs, which emphasize a la minute cooking and chef-inspired creations crafted in state-of-the-art kitchens equipped with top-tier culinary tools. As a Sous Chef, you will be entrusted with supervising the scheduling, training, and discipline of culinary and utility staff, ensuring smooth kitchen operations particularly in the Chef's absence. This leadership position oversees all aspects of kitchen functionality including food production, quality control, sanitation, and compliance with dietary restrictions and food safety standards. You will be responsible for managing daily kitchen production, guaranteeing timely service of meals, and upholding the highest standards for menu preparation and presentation.

Compensation for the Sous Chef role ranges from $65,000 to $70,000 annually, commensurate with experience, with eligibility for annual bonuses. This role requires a minimum of three years of full-service culinary experience and at least six months of supervisory and coaching experience. Additionally, candidates must be able to perform physical tasks such as lifting up to 50 pounds, work in varying temperature environments including hot kitchens and refrigerated spaces, and be available for some weekend and holiday shifts.

Job Requirements

  • Minimum of 3 years full-service experience
  • Minimum of 6 months supervisory and coaching experience
  • Must be able to work some weekends and holidays
  • Be able to lift and/or move objects weighing up to 50 pounds
  • Ability to work in extreme temperatures including hot kitchen to refrigerators and freezers

Job Duties

  • Supervises the scheduling, training, and discipline of all culinary and utility staff
  • Under oversees all culinary functions in the Chef's absence including staffing, food production, utility management, and kitchen sanitation
  • Manages daily kitchen production and food preparation to ensure timely service of resident meals
  • Directs the preparation and service of all menu items including adherence to recipes, proper food handling, food safety, quality, dietary restrictions, and production forecasts
  • Oversees the organization and sanitation of dining rooms, kitchen, storage areas, and loading dock
