The role of the ACE Sous Chef is pivotal within the kitchen and catering operations of A Catered Experience. Reporting directly to the Executive Chef - Catering Operations, the Sous Chef is tasked with overseeing daily kitchen functions and ensuring smooth operational flow during catering events. This position demands a professional culinary expert who can manage kitchen staff, maintain food quality, and guarantee that every dish prepared meets the highest standards of presentation and taste. The Sous Chef is responsible not only for food preparation but also for logistical management including planning, scheduling, ingredient ordering, and inventory control. This role requires keen attention to food safety protocols and the ability to train, mentor, and develop kitchen personnel to uphold ACE's service excellence. Moreover, the Sous Chef will contribute creatively by modifying and developing catering menu items to delight guests consistently. This employment opportunity is classified as exempt and offers competitive compensation consistent with industry standards. Candidates must be adaptable, detail-oriented, and capable of working in fast-paced environments, demonstrating both leadership and culinary skills that make a significant impact to A Catered Experience’s operational success and reputation.

Job Requirements

  • Must be able to work flexible shifts according to the needs of the assignments and/or catering or banquet functions
  • Must be able to lift up to 50 pounds
  • Reaching/bending frequently
  • Good speech and hearing necessary for communicating with other employees, managers, and the public
  • Action-oriented (exercising initiative to follow-up and follow through)
  • Detail-oriented
  • Reading, writing, and oral proficiency in the English language required
  • Must pass drug screening test and physical exam
  • Must have passed a TB test within 5 years of start date with skin test or chest x-ray
  • Must have valid current Hawaii State Driver’s License and clean driver’s abstract

Job Qualifications

  • High school diploma or GED
  • Culinary arts training at community schools with a completion certificate
  • Minimum of two years of Sous Chef experience
  • Good verbal and written communication skills
  • Good interpersonal skills
  • Ability to interact on a professional level with clients
  • Ability to problem solve
  • Ability to supervise others in a positive and professional manner

Job Duties

  • Prepares quality dishes and presents them in an attractive manner
  • Manages the daily kitchen operations including planning, scheduling and ordering of necessary ingredients for functions
  • Follows proper food handling and storage standards
  • Ensures kitchen staff adheres to such guidelines
  • Maintains a safe, sanitary and organized work area
  • Trains new hires and coaches those who need development in efforts to improve their knowledge or skills
  • Effectively handles problems related to food shortages, food preparations and extra guests
  • Maintains the inventory of goods in chill, freezer and dry/canned goods on a weekly basis
  • Ensures the inventory data on the Crunchtime software is accurate
  • Modifies and creates catering menu items to ensure A Catered Experience consistently meets guests’ expectations
  • Performs duties as assigned by management
