The Sous Chef position at Trolley Square Oyster House offers a rare opportunity to join a founding team and play a pivotal role in shaping the culinary direction and culture of this innovative restaurant from its inception. The Sous Chef will work directly alongside the Executive Chef to bring the vision of delivering impeccable cuisine and an unforgettable dining experience to life. They will lead and inspire the back-of-house team, ensuring every dish meets exacting standards for quality, consistency, and presentation.
Responsibilities extend beyond cooking; the Sous Chef must create and sustain a positive, accountable, and team-oriented environment, handle scheduling, workflow, and training, and be prepared to jump into food preparation when necessary. The role demands a balance of strong leadership and hands-on operational capability. The Sous Chef will also collaborate on menu development, tastings, and innovation while maintaining a kitchen that is clean, organized, and fully compliant with food safety and sanitation regulations.

Job Duties
- Partner with the Executive Chef to lead, inspire, and develop the kitchen team
- Execute and elevate dishes that align with our culinary vision every plate, every time
- Keep the kitchen running smoothly, efficiently, and with purpose during service
- Train, coach, and support team members to bring out their best
- Create schedules, manage workflow, and keep the team focused and on track
- Jump in to lead the line and direct food preparation when needed
- Collaborate on menu development, tastings, and new dish creation
- Maintain a clean, organized, and safe kitchen that meets all standards
- Set the standard for quality, consistency, and presentation
- Foster a positive, accountable, and team-first culture
- Delegate with intention prep, cleaning, and daily tasks that keep us moving
- Ensure all equipment is operating properly and troubleshoot when needed
- Uphold and enforce policies while leading with fairness and respect
- Support inventory management, ordering, and product rotation
- Help achieve and maintain budgeted kitchen costs
- Ensure timely execution without compromising quality
