We are currently seeking a highly skilled Sommelier to join the Food and Beverage Team at the newly opened Baldi Tuscan Steakhouse. This full-time role offers a competitive pay rate of $26.49 per hour plus 1.5% commission on wine sales, reflecting the importance of specialized experience and expertise. As a Sommelier, you will play a crucial role in curating, maintaining, and elevating the restaurant’s distinguished wine program, with an emphasis on Italian wines and luxury selections that perfectly complement the Tuscan steakhouse’s refined culinary identity. This position requires a deep knowledge of wine, particularly Italian varieties, and a passion for delivering a Forbes Five-Star guest experience through outstanding wine knowledge, hospitality, and operational excellence.
In this vital role, you will guide guests through exceptional wine experiences by recommending pairings and rare selections that enhance the cuisine and overall dining journey. You will be responsible for maintaining the wine cellar, conducting inventory, assisting with ordering and restocking, and merchandising high-margin, exclusive wines to boost sales through education and guest interaction. Training front-of-house staff in wine service techniques and responsible alcohol service through workshops and tastings will also be a key part of your duties. Collaborating closely with the Beverage Director and Executive Chef, you will design, update, and manage an authentic and seasonally aligned wine list.
Your role will extend to leading or assisting in special events such as wine dinners, tastings, and promotions that engage clientele and elevate the brand. Managing glassware and wine service tools, ensuring POS updates and label accuracy, and working with marketing to promote wine events and seasonal releases are all essential to maintaining the highest luxury standards expected at Waldorf Astoria Beverly Hills. Job Requirements
- High school diploma or equivalent
- Minimum 2 years of sommelier or related wine service experience
- Availability to work various shifts including weekdays weekends and holidays
- Strong passion for wine especially Italian varieties
- Ability to provide exceptional guest service
- Good organizational and multitasking skills
- Ability to work collaboratively with culinary and beverage teams
- Commitment to uphold Hilton values and service excellence
Job Qualifications
- At least 2 years of experience in a fine dining wine focused environment
- Knowledge of Italian wines and culture preferred
- Strong communication and interpersonal skills
- Ability to train and educate staff effectively
- Experience in inventory management and wine cellar organization
- Skilled in wine list design and merchandise management
- Familiarity with luxury hospitality service standards

Job Duties
- Guide guests through an exceptional wine experience recommending pairings and rare selections to complement the cuisine and enhance the guest journey
- Maintain and organize the wine cellar ensuring proper rotation labeling and storage
- Conduct weekly inventory and assist with ordering and restocking

- Conduct regular tastings and workshops

- Assist in maintaining glassware and wine service tools including decanting equipment and Coravin systems
- Assist with POS updates wine list printing and label accuracy
- Collaborate with marketing to promote wine events list accolades and seasonal releases
- Maintain Forbes and luxury service standards through all guest interactions
- Perform other duties as requested by management
