Job Description
Yaamava Resort & Casino, operated by the San Manuel Band of Mission Indians, stands as a premier destination in the Inland Empire, renowned for its luxurious amenities, vibrant entertainment options, and exceptional dining experiences. As one of the largest private employers in the region, Yaamava Resort & Casino is deeply committed to the growth, well-being, and professional development of its employees. The resort integrates a rich cultural heritage and a forward-thinking approach to hospitality, making it a sought-after workplace for food and beverage professionals seeking dynamic career opportunities in a fast-paced environment.
The Sommelier role at Yaamava Resort & Casino is a vital position within the Food & Beverage department, reporting directly to the Director of Food & Beverage. This position is charged with overseeing the wine operations across multiple venues including upscale casual cafes, in-room dining services, and a fine dining steakhouse. The Sommelier is responsible for developing and sustaining an ever-evolving world-class wine program aimed at enhancing guest satisfaction and driving sales growth. Focused on profitability, the role demands meticulous inventory control, accurate financial reporting, and an ability to lead and train the beverage team effectively.
In this dynamic role, the Sommelier ensures compliance with health and safety regulations while maintaining hospitality excellence across all wine-related services. The position not only requires expert knowledge in wine selection, service, and pairing but also demands strong leadership skills to inspire and develop front-of-house staff. The Sommelier designs customized training programs, conducts knowledge audits, and collaborates closely with culinary leadership to ensure a seamless food and wine experience. With direct responsibility for budget adherence and expense management, this role contributes significantly to the financial success of the resort’s venues.
The Sommelier's daily responsibilities include presence on the dining floors to facilitate guest engagement and support team members, managing wine inventory and procurement, and maintaining the highest standards of wine storage and presentation. This role also extends to overseeing equipment inventory such as stemware and decanters while implementing preventive maintenance strategies to minimize costs and waste. Working within a dynamic team environment, the Sommelier must handle multiple priorities efficiently, communicate effectively with guests and staff, and maintain composure under pressure.
This position requires a seasoned professional with a Bachelor’s degree in restaurant management, food or institutional management, alongside a minimum of six years of combined restaurant and wine-related experience. Supervisory experience is preferred to ensure effective team leadership. Candidates must possess a strong understanding of fine dining wine stewarding, beverage cost management, and sales strategies. Certifications such as Serv Safe and a minimum Level 1 Sommelier certification from the Court of Master Sommeliers are advantageous. A valid driver’s license and vehicle insurance are required due to regular commuting between locations.
The Sommelier will thrive in a high-energy, fast-paced casino and resort setting that demands resilience, creativity, and a passion for delivering world-class hospitality. In addition to professional challenges, the role offers an environment enriched by cultural heritage and a commitment to employee well-being, making it an exciting career choice for those looking to excel in the hospitality and beverage industry.
