As a Sommelier at Hawksmoor Chicago, you will play a crucial role in establishing and executing the venue’s wine programme. Reporting directly to the Head Sommelier, the successful candidate will help cultivate a wine offering that complements Hawksmoor’s celebrated meat-centric menu, enhancing the dining experience with expertly curated selections. This role requires a passionate wine professional who is both knowledgeable and approachable, capable of delivering high standards of service and hospitality. The Sommelier will be a key presence on the floor, supporting the Front of House team, ensuring that the full wine programme is understood and appreciated by both colleagues and guests. Job Requirements
- Proven track record in sommelier or wine service roles in a premium restaurant setting
- extensive knowledge of wines and wine regions
- experience with branded wine programmes
- capability to work in a fast-paced, high-volume environment
- excellent communication and interpersonal skills
- ability to work flexible hours including evenings and weekends
- relevant certifications or formal training in wine service preferred
Job Qualifications
- Extensive experience working in some of the best bars and restaurants in Chicago
- experience launching and opening restaurants and bars in Chicago and the US
- comfortable and experienced with high volume businesses in terms of covers and revenue
- good interpersonal skills and ability to work harmoniously with all departments
- exemplary product knowledge of food and beverage, specifically wine
- strong communication and customer engagement skills
Job Duties
- Successfully executing the Hawksmoor wine programme in Chicago
- supporting the Head Sommelier in running and maintaining the wine programme
- ensure service and hospitality standards are high and consistent through good understanding of the full wine programme and all other products
- being a strong presence on the floor supporting the Front of House team
- engaging with guests to enhance their wine experience
- collaborating with kitchen and bar staff to optimize food and wine pairings
- assisting with inventory and stock control of wine supplies
