Torno Subito is a distinguished restaurant inspired by the vibrant culture of Italy during the 1960s and 70s, an era celebrated for its explosion of music, cinema, design, and gastronomy. Founded under the creative vision of renowned Chef Massimo Bottura, Torno Subito captures the nostalgic feeling of returning to cherished moments, such as childhood holidays in Rimini, reconnecting with friends, and reuniting with family. The name Torno Subito, meaning "I'll be back soon," reflects this spirit of return and connection. Located in the prestigious Miami Design District at 191 NE 40th Street, Torno Subito firmly anchors Chef Massimo Bottura's international legacy while bringing an authentic Italian dining experience to the heart of Miami.
Torno Subito is part of The Moore, a landmark destination in the Miami Design District that combines a private members club, hotel, and a collection of restaurants, retail spaces, exhibition areas, events, and office spaces. Housed in the historic circa-1922 Moore building, the nearly 90,000-square-foot space integrates two four-story structures at the intersection of NE 40th Street and NE 2nd Avenue. It features notable elements like Elastika, a commission by the late artist and architect Zaha Hadid. The Moore's offerings extend through all four floors, including public all-day dining, exclusive private club spaces, leasable office areas, hotel suites, and a private exhibition and event space.
The sommelier role at Torno Subito is a critical position dedicated to elevating the overall dining experience through expert wine service and knowledge. As a sommelier, you will have extensive expertise in wine varieties, regions, vintages, and perfect pairings to complement the restaurant's carefully crafted Italian menu. You will contribute significantly to the success and esteemed reputation of Torno Subito by providing thoughtful wine recommendations that enhance guests' meals and foster memorable experiences. The role involves not only wine service but also training restaurant staff, auditing menus and POS systems for accuracy, managing wine inventory, and supporting marketing strategies to boost wine sales. Job Requirements
- Minimum 2 years of experience as a sommelier or wine steward in a Michelin-level or fine dining restaurant
- strong knowledge of wine varieties, regions, vintages, and food pairings
- excellent communication and interpersonal skills
- impeccable presentation and customer service abilities
- ability to lift and carry wine cases and stand for extended periods
- a genuine love for hospitality and guest engagement, with the ability to read and adapt to guest needs
- certified sommelier (CMS, WSET, or equivalent) strongly preferred

Job Duties
- Ensure proper wine storage conditions to maintain wine quality and integrity
- audit paper/digital menus and POS systems for accurate vintage, varietals and blends, and pricing
- provide thoughtful, intuitive recommendations and pairings based on guest preferences, dietary considerations, and menu selections
- assist in the development of wine and food pairing menus and promotions
- train and educate restaurant staff on wine knowledge, service techniques, and wine list updates
- build strong customer relationships through excellent service and by providing a memorable wine experience
- maintain a mastery of the full wine list, including rare, allocated, and emerging producers
- monitor wine inventory levels, ensuring stock levels are appropriate and that wines are stored correctly
- partner with management to help develop and execute marketing strategies to promote wine offerings and increase wine sales
