The role of Sommelier at The Standard, High Line, within the Food and Beverage department, is a vital position that directly supports the hotel's mission of creating exceptional guest experiences. Reporting to the Beverage Director, the Sommelier is charged with selecting and pairing wines, beers, and other beverages to complement the distinct dishes on the menu, thereby enhancing the culinary journey of each guest. This role involves managing beverage inventory and storage, maintaining detailed and accurate records, and ensuring all beverage offerings are delivered at the highest standard. The Sommelier also plays a key role in training staff on beverage knowledge, leading tastings, updating menus, and overseeing beverage sales to maximize guest satisfaction and operational efficiency. Job Requirements
- Previous work experience in upscale high-volume restaurants
- Extensive knowledge of wine
- Ability to read, comprehend and follow instructions
- Fluency in English
- Strong organizational skills and ability to multitask
- Adherence to grooming, uniform, and hygiene standards per SOPs
- Punctuality and adherence to schedule
- Compliance with company policies and standards

Job Duties
- Ordering by the glass (BTG) and fast movers for all outlets once a week
- Keeping physical counts on all BTG to order accurate amounts weekly
- Maintaining knowledge of pars and case breaks
- Keeping the order sheet updated with Beverage Director changes
- Placing orders via Birch Street
- Emailing suppliers with detailed order information including cost and delivery details
- Entering new items into ACCUBAR inventory system
- Communicating complete orders to team and storeroom
- Coordinating with Events team to accommodate private event inventory needs
- Overseeing receiving processes and reconciling invoices
- Consolidating cellar shelves and updating bin sheets daily
- Maintaining and updating staff training materials and leading line-up tastings and quizzes
- Updating menus for all outlets reflecting changes and printing updated materials
- Completing daily closing reports with relevant sales and operational information
- Ensuring wines are properly stocked before service
- Programming and correcting Squirrel POS system updates
- Managing Accubar inventory transfers and adhering to SOPs for new items
- Leading floor duties including organizing daily line-up notes and tastings
- Being present on the floor to assist and lead team members
- Ensuring proper glassware readiness and station cleanliness
- Selling appropriate bottles and encouraging BTG rounds, fortified and dessert wine sales
- Having deep knowledge of the wine list and beverage program including cocktails, beer, and spirits
- Assisting bar team on menu updates and service changes
