SHEEP at Clayton is an exceptional culinary venture conceived by James Beard Award-winning Chef Kelly Whitaker and the creative team behind The Wolf's Tailor. Located on the rooftop of the Clayton Hotel & Members Club in Cherry Creek, Denver, SHEEP is a limited three-month residency that offers a unique fire-driven dining experience. The concept is deeply rooted in seasonality, craftsmanship, and hospitality, highlighting an open hearth and a thoughtfully curated four-course tasting menu with guest choice. This immersive dining experience invites guests to explore the stories, traditions, and ingredients that define the menu, making it one of the most innovative and anticipated culinary experiences in Denver.

Job Requirements

  • minimum 1 year of hospitality, restaurant, hotel, or private club experience
  • ability to work evenings, weekends, and holidays
  • strong communication and interpersonal skills
  • ability to remain calm and professional in a fast-paced environment
  • ability to stand and walk for extended periods
  • ability to lift up to 30 pounds

Job Qualifications

  • minimum 1 year of hospitality, restaurant, hotel, or private club experience
  • strong communication and interpersonal skills
  • ability to remain calm and professional in a fast-paced environment
  • experience in fine dining, tasting menu, Michelin-recognized, or chef-driven restaurants preferred
  • wine, spirits, cocktail, or beer knowledge preferred
  • knowledge of OpenTable and modern POS systems preferred
  • previous experience in luxury hospitality or private clubs preferred

Job Duties

  • create memorable experiences through genuine hospitality and personalized service
  • anticipate guest needs and respond proactively
  • build meaningful connections with members, hotel guests, and local patrons
  • deliver service that reflects the standards of both Clayton Hotel & Members Club and Id Est Hospitality
  • maintain a welcoming and professional presence at all times
  • develop extensive knowledge of menu offerings, ingredients, preparation methods, and sourcing stories
  • confidently explain tasting menu courses and beverage pairings
  • answer guest questions regarding allergens, dietary restrictions, and menu modifications
  • participate in daily pre-shift meetings and ongoing education programs
  • follow all service standards, sequence of service, and reservation procedures
  • maintain cleanliness and organization throughout the restaurant
  • support teammates during service to ensure a seamless guest experience
  • accurately enter orders, process payments, and complete side work assignments
  • adhere to all health, safety, sanitation, and responsible alcohol service requirements
  • foster a collaborative and positive work environment
  • support cross-training and assist in multiple service positions as needed
  • contribute to a culture of professionalism, accountability, and continuous improvement
