The Senior Pastry Cook position on The World plays a crucial role in maintaining these high standards, ensuring that all pastry products served aboard meet the highest levels of freshness, taste, and consistency. This role is heavily centered on quality control, recipe adherence, and consistent production of pastries that reflect both tradition and the unique preferences of the residents on board. The Senior Pastry Cook supervises junior pastry chefs and manages the bakery section to make sure all daily operations run smoothly and efficiently.

This role demands a meticulous individual with advanced pastry production and presentation skills along with strong leadership qualities. The Senior Pastry Cook must ensure all ingredients are correctly handled and that hygiene and safety standards are uncompromised, aligning with both maritime and hospitality regulations. The successful candidate will monitor budget constraints by minimizing waste and maximizing ingredient usage. Communication with the Executive Pastry Chef is fundamental to maintaining and enhancing the quality standards that residents expect.

Job Requirements

  • Culinary school 2-4 year degree or foreign equivalency preferred
  • certificate in sanitation and public health preferred
  • minimum of 2 years’ relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort
  • minimum of one year experience in pastry production (may be combined with formal culinary training)
  • good computer skills to include Word, Excel and Outlook
  • must demonstrate high levels of competence of all basic pastry techniques and skills
  • knowledge of basic equipment including balance scales, mixers, and ovens
  • experience in pastry production and presentation
  • ability to convert quantities mathematically
  • must be able to handle multiple task simultaneously
  • must work well with others and be able to foster a harmonious working environment
  • working knowledge of inventory management systems and Fidelio

Job Qualifications

  • Able to read, write and speak fluently in English
  • culinary school 2-4 year degree or foreign equivalency preferred

  • minimum of one year experience in pastry production (may be combined with formal culinary training)

  • must demonstrate high levels of competence of all basic pastry techniques and skills, including pastry principles, formulas and measurement, starches, fats, sugars, liquids, eggs, and flavourings
  • knowledge of basic equipment including balance scales, mixers, and ovens
  • experience in pastry production and presentation
  • ability to convert quantities mathematically
  • must be able to handle multiple task simultaneously while ensuring that each dish is prepared and served promptly
  • must work well with others and be able to foster a harmonious working environment
  • working knowledge of inventory management systems and Fidelio

Job Duties

  • Prepare candies, petit fours, frozen and cold desserts
  • adhere to all recipes and cooking methods
  • decorate, portion and plate pastries for buffets and presentations
  • ensure all food is prepared fresh and is of the highest quality
  • ensure all ingredients are properly procured, stored, scaled, and prepared
  • check food temperature and follow proper procedures in regards to chilling, and holding food
  • report waste to the Executive Pastry Chef
  • communicate with the Executive Pastry Chef regarding pastry related matters
  • supervise junior chefs, assist with development of knowledge, effectively taking charge of assigned section by the direct supervisor in compliance with the given daily tasks in the bakery galley
  • responsible for follow up on productivity and outcome of assigned tasks during the daily operation
  • responsible for maintaining high hygiene and safety standards in the pastry galley
  • check station prior to leaving to ensure cleanliness, proper disposal, storing and labelling
  • assist in achieving the budgets by minimizing waste and breakage and maintaining proper handling procedures
  • acknowledge Residents’ preferences and ensure all changes are communicated
  • exceed Resident and Guest expectations in every aspect of personalized service in accordance with Leading Quality Assurance (LQA) standards
  • actively support the goals and objectives for the department and adhere to all new policies and company initiatives as assigned
  • participate in the buddy program
  • actively participate in Company trainings as required
  • maintain accurate time and attendance records for each time period worked
  • ensure all areas are maintained in accordance with Public Health (HACCP), Safety Management System (SMS) and Safety & Environmental regulations
  • execute safety duties as per the Emergency Plan and Station Bill
  • assist with ship tours, zodiac landings, marina days, expeditions, and other activities when required
