The Food & Beverage Manager role at Hotel Zena is a pivotal leadership position responsible for overseeing all aspects of food and beverage operations with a sharp focus on profitability, quality, and guest satisfaction. This role entails comprehensive operational leadership including financial management, budget accountability, labor cost control, and revenue optimization. The Food & Beverage Manager will partner closely with the executive leadership team, contributing to broader hotel strategies, elevating guest experiences, and ensuring compliance with all health, safety, and liquor laws. The role also involves spearheading innovation in menu development in collaboration with the culinary team, fostering a culture of continuous improvement, and driving brand activation and promotional efforts to engage the guest community.

Job Requirements

  • Bachelor's degree in hospitality management or related field preferred
  • Minimum of 5 years experience in food and beverage management preferably in luxury or lifestyle hotels
  • Proven track record managing multi-outlet F&B operations with profitability
  • Strong leadership and team development skills
  • Excellent financial management capabilities including budget preparation and cost control
  • In-depth knowledge of health safety sanitation and liquor laws
  • Exceptional communication and interpersonal skills
  • Ability to work under pressure and handle multiple priorities
  • Proficiency in hotel management software and POS systems
  • Willingness to work flexible hours including evenings weekends and holidays

Job Duties

  • Provide strategic oversight and full operational leadership for all Food & Beverage outlets ensuring alignment with Hotel Zena's brand positioning and guest experience standards
  • Lead develop and hold accountable outlet leadership teams fostering a high-performance culture focused on service excellence innovation and colleague engagement
  • Drive financial performance by managing revenue labor cost controls and profitability with clear ownership of budgeting forecasting and wage progress
  • Act as a key business partner to Executive Leadership contributing to overall hotel strategy revenue optimization and operational planning
  • Ensure elevated guest experience standards by proactively addressing service gaps resolving escalated concerns and implementing continuous improvement initiatives
  • Oversee compliance with all regulatory requirements including health safety sanitation and liquor laws ensuring zero-risk operational standards
  • Establish enforce and continuously refine SOPs and service standards across all outlets to maintain consistency and operational excellence
  • Lead menu development and concept execution in collaboration with Culinary leadership ensuring innovation market relevance and profitability
  • Analyze operational and financial data revenue trends labor efficiency guest feedback to inform strategic decisions and drive performance improvements
  • Maintain strong cross-functional collaboration with Rooms Sales & Marketing and Finance to ensure seamless guest experiences and maximize total hotel revenue
  • Oversee workforce planning talent acquisition succession planning and leadership development within the F&B division
  • Champion training initiatives and leadership development programs ensuring capability building at all levels
