The position of Senior Cook at Banner Del E. Webb Medical Center within the Culinary & Nutrition department represents a vital role in the delivery of quality food services that support patient care, staff wellbeing, and visitor satisfaction. This role primarily involves preparing fresh hot food for both production and retail dining services, including meals for patients and various special events. The Senior Cook works closely with the culinary team to ensure food safety, efficiency, and quality, particularly in a fast-paced environment requiring a high volume of short order cooking. This position demands meticulous attention to precise recipe preparation, food production timing, inventory management, and maintaining cleanliness and organization in the kitchen. Additionally, the Senior Cook supports essential kitchen operations such as dishwashing, food prep assistance, inventory restocking, and unboxing food supplies.
The role offers part-time, varied shifts primarily covering weekends and holidays with a Friday to Sunday schedule, including shift differentials like an additional flat rate weekend shift differential of $1 per hour and an 18 percent night shift differential where applicable. Job Requirements
- High school diploma/GED or equivalent working knowledge
- two or more years of experience in production cooking
- knowledge of cooking principles and menu substitutions
- ability to follow food safety and handling regulations
- effective verbal and written communication skills
- ability to perform math calculations
- ability to work varied weekend and holiday shifts
- ability to obtain food handlers' card within 30 days of hire if applicable
- ability to use commercial kitchen equipment safely
- physical ability to perform cooking and cleaning tasks
- for Banner Behavioral Health Hospital employees, possession of Arizona Fingerprint Clearance Card
- willingness to sign an Arizona Criminal History Affidavit
Job Qualifications
- High school diploma/GED or equivalent working knowledge
- two or more years of similar work experience in production cooking
- solid understanding of cooking principles, menu substitutions, and modified recipes for commonly prescribed diets
- skills and abilities in hot food production
- experience using commercial kitchen equipment
- ability to learn and follow established policies and procedures
- effective communication skills
- ability to perform math calculations for recipe weights and food production amounts
- knowledge of food handling regulations and ability to pass certification tests
- ability to perform tasks within limited time frames
- ability to follow production and cleaning schedules
- ability to use chemicals safely
- leadership skills in culinary food preparation
Job Duties
- Prepares all food items according to standardized recipes
- adjusts recipe quantities for correct yields
- notifies supervisor of any problems relating to production
- plans food production timing and quantities in accordance with daily orders, menu tally sheets, and production assignments
- determines menu substitutions in case of shortages and consults with diet tech or dietician for special diets
- minimizes food waste with appropriate planning and tracking
- records food shortages and excess quantities
- checks and logs food and equipment temperatures and reports problems
- maintains par levels of food and supplies, orders or restocks items, rotates food stocks, checks freshness dates
- keeps assigned work areas clean and orderly
- reports equipment repair needs
- receives and checks in deliveries from vendors
- oversees production quality when needed
- provides leadership and knowledge in cooking and food preparation to kitchen staff
- interacts with external customers in café or catering work assignments
