The Senior Cook position within Banner Health's Culinary & Nutrition department is an essential role focused on preparing meals from scratch, adhering strictly to established recipes and presentation standards. This position is designed for individuals passionate about food preparation in a fast-paced healthcare environment where both quality and hygiene are paramount. As part of this role, the Senior Cook will prepare and serve hot foods for patients, retail dining outlets, and special events, ensuring that dietary requirements and nutritional standards are met consistently. Experience in healthcare food service or high-volume short order cooking is highly preferred, highlighting the role's demanding nature and the need for speed and accuracy. Additionally, the position involves responsibilities beyond cooking, such as assisting with dishwashing, food preparation, unboxing supplies, managing inventory, restocking shelves, and providing excellent customer service.
This is a full-time position with varied shifts including weekends and holidays, featuring specific shift times such as 4:00 am to 12:00 pm and 5:00 am to 1:30 pm. Employees receive additional compensation including a weekend shift differential of $1 per hour and an 18% night shift differential for shifts starting after 7 pm. The Senior Cook will be integral to meal planning and execution, ensuring the timely production of food items based on daily production sheets, menu requirements, and catering requests. They will also be responsible for minimizing food waste, maintaining par levels of food and supplies, rotating stock, and adhering to safety and sanitation policies. The role demands excellent organizational skills and the ability to lead and support kitchen staff while maintaining a clean and orderly work environment. Job Requirements
- High school diploma or GED or equivalent working knowledge
- two or more years of related experience in production cooking
- ability to read and follow recipes and safety guidelines
- knowledge of various cooking methods and food preparation techniques
- capability to handle high-volume, fast-paced kitchen environment
- strong organizational and time management skills
- Food handlers' card within 30 days of hire for Banner Staffing Services team members
- Arizona Fingerprint Clearance Card required for employees at Banner Behavioral Health Hospital
- ability to communicate effectively and work collaboratively
- willingness to work varied shifts including weekends and holidays
Job Qualifications
- High school diploma or GED or equivalent working knowledge
- two or more years of similar work experience in production cooking
- solid understanding of cooking principles and menu substitutions
- ability to prepare modified recipes for prescribed diets
- skills in hot food production and use of commercial kitchen equipment
- ability to read and understand written and verbal instructions
- effective communication skills
- ability to perform math calculations related to recipe weights and quantities
- knowledge of food handling regulations and ability to pass certification tests
- capability to perform tasks within limited time frames and follow production and cleaning schedules
- safe use of chemicals
Job Duties
- Prepares all food items according to standardized recipes
- adjusts recipe quantities for correct yields
- notifies supervisor of any production problems
- plans food production timing and quantities based on daily orders and menu tally sheets
- determines menu substitutions in case of shortages
- consults with diet tech or dietician for special diet substitutions
- minimizes food waste through appropriate planning and tracking
- records food shortages and excess quantities
- checks and logs food and equipment temperatures
- reports any problems to supervisor
- maintains par levels of food and supplies, orders and restocks items
- rotates food stocks and checks freshness dates
- keeps assigned work areas clean and orderly
- reports equipment repair needs
- receives and checks in deliveries from vendors
- oversees production quality when necessary
- provides leadership and knowledge in cooking to kitchen staff
- may deal with external customers in café or catering assignments
