The Athenaeum, a private membership club on the beautiful campus of Caltech, is an exclusive venue founded in 1930 to serve Nobel Laureates, faculty, scholars, and selected members of the community. It functions as a gathering place for sharing ideas about science, art, and literature while providing first-class dining, events, and lodging services. Recognized as a "Platinum Club of America," The Athenaeum maintains a high standard of service for approximately 3,900 members, including faculty, staff, and students of Caltech.

The Senior Cook role at The Athenaeum is a full-time, benefit-eligible position that requires a highly skilled culinary professional to work with minimal supervision. The Senior Cook is responsible for preparing and cooking standard and specialty food items, developing menus, overseeing inventory, and ensuring the kitchen operates efficiently while adhering to safety and sanitation regulations. This position demands proficiency in a range of cooking techniques and the ability to manage kitchen operations during peak service periods. The Senior Cook will also provide leadership by training new cooks, supervising food quality and presentation, and ensuring compliance with ServSafe standards. This role is critical in delivering exceptional dining experiences for members and guests, and the Senior Cook must be ready to cover all kitchen stations as needed to meet high demand or staff shortages.

Job Requirements

  • Culinary certificate
  • minimum of 4 years experience in a dine-in a la carte restaurant or 6 years relevant experience in a busy a la carte dining facility
  • ability to follow and maintain ServSafe sanitation and safety standards
  • ability to carry 50 pounds of cooking utensils, pots, supplies and ingredients repeatedly
  • ability to read, write and follow instructions in English
  • ability to perform basic mathematics including addition, subtraction, multiplication, division and percentage conversions

Job Qualifications

Job Duties

  • Perform and complete a full range of cooking skills for main dishes and side orders
  • prepare and cook meats, fish, vegetables, gravies, sauces, cereal, soups, fruits, bakery products and other foods according to recipes or member orders
  • cook from scratch or make substitutions as requested
  • develop menus and coordinate ordering process to ensure adequate supplies
  • oversee inventory levels of food items and supplemental goods
  • clean and sanitize work areas and equipment according to protocol
  • assure ServSafe compliance in assigned work area or kitchen
  • synchronize food preparation with reservations and peak periods
  • coordinate food preparation during service period and check quality and presentation of dishes
  • prepare, cook and bake specialty items including ethnic, dietary and religious needs
  • provide coverage for all kitchen stations during high demand or staff shortage
  • ensure kitchen equipment is properly working and health and sanitation standards are met
  • lead a la carte and special/private events service in the kitchen
  • supervise food preparation, quality and efficiency of service
  • assist in maintaining timely service for a la carte dining and special/private events
  • provide leadership to other staff to ensure food preparation according to recipes and menu
  • train new cooks and kitchen staff
  • ensure correct food handling for proper food cost
  • prepare order list for purchaser and may place orders with vendors
  • perform other related duties as assigned
