The seasonal Sous Chef position at Dune Deck Beach Club and The Hills is a pivotal role within the Food and Beverage Culinary Department. This full-time opportunity, running from April through October 1, 2026, offers a chance to be part of a talented culinary team led by the Executive Chef. The Sous Chef will oversee food preparation and kitchen organization, ensuring consistency, quality, and accuracy in delivering exceptional culinary experiences to members and guests. This position demands a passionate leader who can mentor and develop the culinary staff while driving efficient kitchen operations.

The Sous Chef’s responsibilities include collaborating closely with the Executive Chef to manage ingredient quality and quantities, minimize waste, assist in menu creation, and maintain rigorous food safety standards such as ServSafe and HACCP compliance. Attention to detail in food presentation, taste, and portion control is crucial. The role also involves scheduling kitchen staff, adhering to budgetary constraints, maintaining kitchen equipment, and ensuring all safety, health, and government regulations are followed.

Applicants should bring a culinary degree or strong pedigree with at least five years of experience in high-end resorts, hotels, or private clubs, demonstrating expertise in cookery techniques, local and imported ingredients, and operational knowledge of food and beverage services. The position requires flexibility to work evenings, weekends, and holidays, along with excellent communication skills, a positive attitude, and the physical stamina to meet the demands of a dynamic kitchen environment.

Job Requirements

  • Must be able to work flexible work hours schedule including evenings weekends and holidays
  • Shift greater than eight hours in length may be required due to business demands
  • Positive attitude professional demeanor and exceptional communication and interpersonal skills
  • Ability to work in a team environment
  • Ability to stay calm and focused during busiest times
  • Ability to read write speak and understand English additional languages preferred
  • Ability to meet physical demands including working indoors and outdoors in all weather conditions standing walking and moving for periods greater than eight hours and lifting items greater than fifty pounds
  • Flexibility and ability to pivot to new projects and desire to work in fast paced environment

Job Qualifications

  • Culinary degree or pedigree
  • At least five years of culinary experience in large world class resort hotels and clubs
  • Prior culinary leadership experience in high end restaurant resort or private club preferred
  • Complete knowledge and understanding of all cookery techniques and processes
  • Thorough knowledge of all food products local and imported
  • Experience sourcing local ingredients and creating menu items based on seasonal ingredients
  • Thorough understanding of occupational health and safety issues
  • Knowledge of food and beverage operational requirements

Job Duties

  • Work closely with the Executive Chef in determining quality and quantity of ingredients used with a view of eliminating waste/spoilage especially meats fish produce etc
  • Assist Executive Chef and Culinary Director with menu creation development and implementation
  • Discuss with the Executive Chef and recommend menu price adjustments when warranted and determine prices of unlisted food items with guidance
  • Schedule working hours of all kitchen employees taking into consideration the volume of expected business while conserving labor cost
  • Adhere to budgeted headcounts for outlet according to budget and business level
  • Assign specific duties to all employees under supervision and instruct them in their work
  • Ensure quality of all food items prepared by constantly checking food for taste temperature and visual appeal
  • Ensure dishes are uniform and portion sizes adhere to specifications set by the Executive Chef
  • Stay alert for new products to improve food quality or reduce food cost and make suggestions to Executive Chef
  • Prevent use of contaminated products and ensure employees who are ill do not handle food
  • Manage food safety including ServSafe HACCP and local food safety regulations
  • Ensure adherence to safety health security and loss control policies and Government legislation
  • Collaborate closely with Stewarding to maintain clean and orderly kitchen areas
  • Ensure spoiled or damaged serving utensils are not in use and maintain equipment par levels
  • Check maintenance of all equipment and prevent damage or loss of property
  • Perform other duties as assigned
