The role available at the St. Regis Newport Beach location is a full-time, non-management position in the Food and Beverage & Culinary category, offering competitive compensation of $30.00 per hour. This role is integral to maintaining the high standards of culinary excellence expected at this luxury resort. The successful candidate will be responsible for a variety of food preparation and cooking duties, including the preparation of special meals and substitute items, as well as regulating the temperatures of ovens, broilers, grills, and roasters to ensure food is cooked to perfection. They will manage the thawing process by pulling food from freezer storage to refrigerate accordingly, and oversee the proper portioning, arrangement, and garnishing of dishes to uphold presentation standards.
Maintaining food logs and monitoring the quality and quantity of food preparation are key aspects of the role, ensuring consistency and adherence to established culinary standards. Communication plays a crucial role during busy periods, with the individual expected to seek assistance as needed and keep the Chef informed of excess food items suitable for daily specials. Additionally, they will provide timely updates to Food & Beverage service staff regarding menu specials and any out-of-stock items, ensuring seamless service and guest satisfaction. The position demands strict compliance with recipes, quality guidelines, presentation standards, and food preparation checklists, encompassing both hot and cold food preparation.
