Currently, Dune Deck Beach Club is looking for a dedicated and skilled Seasonal Chef de Cuisine to join its Food and Beverage Culinary Department for the season spanning April to October 2026. This seasonal role is an exceptional opportunity for culinary professionals passionate about high-end gastronomy and operational excellence within a prestigious environment. As the Chef de Cuisine, the successful candidate will play an integral role in managing daily operations of the Culinary department. This includes collaborating closely with the Executive Chef, Culinary Director, and Food and Beverage Service teams to uphold and enhance the distinguished standards the club is known for.

The role entails overseeing all aspects of the kitchen – from staffing, training, and scheduling to ensuring high culinary standards, sanitation, and food safety. The Seasonal Chef de Cuisine also participates in menu planning, recipe standardization, cost management, and coordinating special events and catering. This dynamic role demands a leader who is capable of motivating and developing a skilled team adept at maintaining exemplary food quality and operational effectiveness. Job Requirements

  • Must be able to work flexible work hours/schedule including evenings, weekends, and holidays
  • shift greater than eight (8) hours in length may be required due to business demands
  • positive attitude, professional demeanor, and exceptional communication and interpersonal skills
  • ability to work in a team environment
  • ability to stay calm and focused during the busiest of times
  • ability to read, write, speak, and understand English
  • additional languages preferred
  • ability to meet the physical demands of the position including working indoors and outdoors in all weather conditions, standing, walking, and moving for periods greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds

Job Qualifications

  • Culinary degree or pedigree
  • at least 7 years of progressive culinary experience in large world class resorts, hotels and clubs
  • prior culinary leadership experience in high end restaurants, resorts or private clubs preferred
  • complete knowledge and understanding of all cookery techniques and processes
  • knowledge of F&B operational requirements
  • thorough knowledge of all food products - local and imported
  • experience sourcing local ingredients and creating menu items based on seasonal ingredients
  • thorough understanding of all occupational health and safety issues

Job Duties

  • Work with all culinary and F&B leaders to create exemplary culinary standards and an environment of continual improvement
  • hire and train staff to prepare and execute all food production for all club outlets
  • create and follow departmental budgets to minimize labor, operational and food costs
  • schedule working hours of all kitchen employees considering business volume and labor cost conservation
  • continually strive to raise food quality levels and sanitation standards
  • assist in developing standardized recipes, signature items and portion control
  • implement and monitor food tracking systems
  • work with Executive Chef in planning menus to enhance dining outlets and cater to members' needs
  • assist in planning special events and catering projects with prep lists and menus for every meal period
  • evaluate job performance of kitchen staff, correcting, rewarding or disciplining fairly and legally
  • submit weekly and month-end reports for review
  • attend weekly manager’s meetings
  • motivate a team to maintain and clean kitchen equipment and food service areas and cross-train for full utilization and development
  • ensure high level of food safety management system including HACCP and local food safety regulations
  • ensure adherence to safety, health, security, loss control policies and government legislation
