Job Requirements

  • Graduation from high school or equivalent
  • Progressively responsible experience in quantity cooking and menu planning
  • Food services management experience in a school or similar institution
  • Supervisory aptitude demonstrated through experience or training
  • Valid food handlers training certification
  • Knowledge of USDA meal pattern requirements
  • Ability to manage food service budgets and inventories
  • Ability to supervise and train food service employees
  • Compliance with state and federal health and safety regulations

Job Qualifications

  • Graduation from high school or equivalent

  • Food services management experience in a school or institution with responsibility for daily food service operations
  • Supervisory aptitude demonstrated through previous roles or training
  • Valid food handlers training level certification from Hawaii Department of Health, ANSI accredited organizations or equivalent
  • Successful completion of academic courses or a degree in food service management or related fields may substitute experience requirements

Job Duties

  • Determine and develop plans for efficient service, equipment, facilities, and operations in consultation with the principal and School Food Service Branch
  • Manage and direct daily food service operations
  • Review and revise internal operating procedures
  • Establish and maintain high standards of quality control for food production and distribution
  • Supervise the preparation of approved menus and recipes and the serving of reimbursable meals under USDA meal pattern requirements
  • Modify menus to accommodate prescribed dietary needs of students
  • Participate in the interview, selection, planning, directing, scheduling, and evaluation of food service employees
  • Provide orientation and training to subordinate food service employees on work practices, equipment operation, and safety and sanitation requirements
  • Ensure subordinate employees achieve required USDA training hours
  • Estimate and order food and supplies to meet menu needs
  • Arrange receipt and storage of goods, supplies, and commodities
  • Maintain perpetual inventory, daily financial reports, and related records manually or with computer assistance
  • Monitor and control expenditures and maintain assigned budget
  • Review, approve, and process invoices for payment
  • Inspect kitchen, dining areas, and other food service facilities daily to ensure compliance with health, safety, and sanitation regulations
  • Schedule and supervise maintenance and repair of equipment
  • Coordinate satellite food serving operations when applicable
  • Attend staff meetings and workshops and maintain required certifications and training records as outlined by USDA
