Job Description

The hiring establishment is a high-volume, upscale restaurant known for its dedication to quality, consistency, and delivering an exceptional dining experience. This establishment operates in a fast-paced hospitality environment where culinary excellence and professional kitchen operations are paramount. This restaurant emphasizes using fresh ingredients, maintaining strict food safety standards, and ensuring that each dish served meets the highest standards of taste, presentation, and temperature. Employees are encouraged to uphold a professional appearance and contribute positively to the kitchen team and overall guest satisfaction.

The role offered is for a Sauté Cook, a specialized culinary position pivotal to the kitchen's success and the guest experience. The Sauté Cook is responsible for preparing and cooking sautéed dishes, pasta, vegetables, and a variety of meat, poultry, and seafood entrées in strict accordance with established recipes and food safety standards. This role supports kitchen operations by ensuring consistent food quality, proper preparation techniques, efficient service execution, and a positive dining experience for members and guests. The Sauté Cook must arrive on time, maintain professional grooming and hygiene, and adhere to company uniform standards.

The position demands setting up and stocking the sauté station with all required ingredients, equipment, plateware, utensils, and supplies needed for service. The cook will assist the Chef and Sous Chef with food preparation tasks, including portioning and preparing meats, poultry, seafood, and vegetables according to specifications. Communication skills are essential to immediately report any operational issues, inventory concerns, equipment malfunctions, food quality issues, or safety and sanitation concerns to supervisory staff.

Performance of the Sauté Cook is measured through the ability to prepare food items following standardized recipes, portion controls, preparation methods, and presentation standards. Supporting kitchen operations during service by coordinating food preparation, monitoring ticket flow, and maintaining quality and timing standards for all menu items is crucial. They are expected to ensure that all dishes meet established standards for taste, appearance, temperature, consistency, and presentation before leaving the kitchen.

Maintaining a clean, organized, and efficient work area is required, as is promoting a safe and professional kitchen environment. The role also includes monitoring station workload, managing production levels, and collaborating with team members to ensure timely preparation and delivery of menu items. Inventory monitoring, managing par levels, and communicating shortages or replenishment needs to management is part of the daily routine.

The Sauté Cook must select, prepare, season, cook, and plate menu items according to precise recipe specifications and desired doneness standards, with no held food items on the line, ensuring prompt service at appropriate temperatures while maintaining company quality standards. Strict adherence to food safety, sanitation, workplace safety, and health regulations throughout every shift is mandatory. This includes completing opening, ongoing, and closing side work such as cleaning, product storage, restocking products, smallwares, plates, and documenting as required. The Sauté Cook may also support other kitchen functions and perform additional duties as assigned to meet operational needs.

This position requires flexibility in scheduling, including morning, evening, weekend, holiday, and other business-required shifts. Physical demands include working in temperature extremes, exposure to restaurant equipment noise, fumes, odors, and smoke. The role involves standing and walking for extended periods, frequent bending and reaching, and moving equipment or items weighing up to 50 pounds regularly and occasionally up to 100 pounds, with reasonable accommodations provided for individuals with disabilities. Overall, this role is an essential member of the kitchen team, committed to culinary excellence and the delivery of an outstanding guest dining experience.
