Job Description

Bazaar Meat Las Vegas is a pioneering restaurant renowned for its bold and artistic celebration of meat, showcasing a unique combination of primal cooking methods and modern culinary craftsmanship. Situated in the vibrant heart of Las Vegas, the restaurant prides itself on delivering a theatrical dining experience that revolves around live-fire cooking techniques, premium meat cuts, and a dynamic, interactive service style. The environment combines the energy of a luxury steakhouse with avant-garde presentations, creating an unforgettable gastronomic adventure for guests. Operating within this innovative space requires dedication to both the art of cooking and the science of hospitality.

Bazaar Meat is a proud member of the José Andrés Group (JAG), a globally acclaimed hospitality company recognized for culinary innovation, excellence, and a deeply rooted culture of hospitality and purpose. Led by the visionary chef José Andrés, the group embraces a philosophy that celebrates people and products through best-in-class dining experiences. This cultural ethos permeates every aspect of Bazaar Meat Las Vegas, fostering an environment where creativity, indulgence, and precision are paramount.

The role of Restaurant Manager at Bazaar Meat Las Vegas is a critical leadership position responsible for upholding the restaurant’s high standards of service and operational excellence. Reporting directly to the Assistant General Manager or General Manager, the Restaurant Manager will oversee all front-of-house operations across various dining outlets, including the main dining room, bar, private dining suites, and VIP services. The position demands a dynamic leader who is floor-driven and can thrive in a high-volume, high-energy setting while maintaining the brand’s elevated service standards.

Success in this role requires strong operational leadership, a keen attention to detail, and an engaging presence that ensures an exceptional guest experience. The Restaurant Manager will drive day-to-day service execution, manage reservations, optimize floor plans for efficient table turns, and enforce the immaculate upkeep of the restaurant environment. Additionally, the manager will lead impactful pre-shift meetings to enhance product knowledge and sales strategies, ensuring that every team member is well-prepared to deliver the restaurant’s signature theatrical and detail-oriented service.

A significant aspect of this role involves fostering a positive, high-performance team culture. This includes recruiting and training top hospitality talent, coaching staff on service techniques and product storytelling, and building a strong leadership bench to support business growth. The Restaurant Manager will also champion guest satisfaction by maintaining a visible floor presence, engaging in VIP interactions, personally handling guest recoveries, and swiftly implementing feedback-driven improvements.

Financial performance is another key focus area. The Restaurant Manager will work closely with the leadership team to monitor and manage labor costs, sales metrics, and operational expenses. They will ensure compliance with company policies, health and safety regulations, and oversee administrative tasks such as timekeeping and cash handling. Collaborations with culinary and beverage teams will be crucial for inventory management, cost control, and waste reduction efforts.

Moreover, the Restaurant Manager will play an active role in driving revenue growth through strategic upselling, promoting premium menu items, and supporting sales initiatives including private dining and partnerships within the Las Vegas market. Compliance with industry standards and local regulations will be rigorously maintained, along with leadership in food safety and workplace protocols.

This salaried, exempt position offers the opportunity to work in a prestigious, innovative hospitality environment with competitive compensation and a comprehensive benefits package. The successful candidate will be flexible to work nights, weekends, holidays, and peak business hours typical of Las Vegas. Joining Bazaar Meat Las Vegas means becoming part of an internationally recognized team dedicated to excellence, creativity, and purposeful hospitality.
