The General Manager position at Polly's KFC is a critical leadership role focused on managing all store operations and driving business success through accountability, ownership, and consistent execution of company standards. This full-time salaried role requires the General Manager to lead by example while overseeing every aspect of the store’s function, including staff recruitment and training, service quality, marketing, P&L management, and compliance with health and safety regulations. The General Manager serves as the face of Polly's KFC in the community and is responsible for both the internal team environment and the external customer experience.

In this role, the General Manager must cultivate and maintain a motivated and competent team that delivers exceptional guest experiences daily. They will be responsible for workforce planning, scheduling, labor management, coaching, and development of both management-level and frontline employees. They handle all operational controls, including inventory management, cash handling, and adherence to company policies aimed at reducing waste, costs, and operational risks.

The General Manager will also focus on achieving financial targets by forecasting sales, controlling expenses, and optimizing productivity. They use a variety of tools to monitor performance, implement improvements, and align store operations with strategic goals and budgets. Additionally, the position requires active participation in community relations and marketing initiatives to attract and retain business.

This role demands a hands-on leader who is proficient in both the operational and business sides of restaurant management. Job Requirements

  • 1-5 years of related supervisory experience

Job Duties

  • Deliver high quality results through workforce planning including recruitment, selection, on boarding, education and coaching
  • Manage store operations through adherence to policies, service standards and continual improvement of procedures
  • Lead labor and team member management including scheduling, monitoring, communication, planning and counseling
  • Build team by fostering rapport, support, coaching, delegation and development
  • Support long-term development and accountability of management-level staff
  • Ensure guest satisfaction by monitoring, evaluating and auditing food, beverage and service, initiating improvements as necessary
  • Manage cash handling, including verifying safe, cashier drawers, making change and bank deposits
  • Implement operational tools to optimize production, guest service standards and productivity
  • Align store performance with strategic and annual forecasts and budgets, monitor finances and enforce financial controls
  • Drive brand team initiatives, public relations and community programs to attract and retain business
  • Develop and implement sales strategies to increase store revenue
  • Adhere to company service level standards to control costs including food, beverage, supplies, utilities and labor
  • Manage P&L responsibilities including sales forecasting, profit control and adjustments
  • Control inventory and profit by following financial procedures and taking corrective actions
  • Estimate food and beverage costs and coordinate provisioning with Home Office
  • Oversee portion control and waste minimization
  • Manage store inventory using the Merit system and recommend adjustments
  • Complete financial, audit and payroll duties in a timely manner
  • Ensure compliance with operational standards, policies, and legal regulations
  • Maintain security procedures for team, guests and assets
  • Ensure the store meets sanitary and regulatory inspection standards through audits and timely resolutions
  • Foster safe work environment and promptly report accidents
  • Maintain communication with the Area Director regarding operational issues
  • Provide coaching and motivation to team members
  • Resolve human resources issues including attendance, conflict resolution, and discipline
  • Comply with California wage and hour laws and Polly's meal and rest policies
  • Work a minimum of five dinner rush shifts and at least two closing shifts per week
  • Work varied hours including weekends and holidays with holiday blackouts for peak business periods
