As a Restaurant Line Cook at Great Wolf, you will play a crucial role in upholding the company’s commitment to high-quality hospitality in a fast-paced and dynamic restaurant setting. This role includes a variety of workstations including pantry, fryer, broiler/grill, sauté, dessert station, buffet, banquet, and buffet action stations, offering a diverse and engaging work environment. As a line cook, you will be responsible for maintaining all food safety and sanitation standards, performing prep work for diverse ingredients like fruits, vegetables, meats, and seafood, managing inventory, and ensuring equipment is clean and operational. You will collaborate closely with the main kitchen cook, culinary leaders, and other team members to coordinate tasks and maintain smooth kitchen operations throughout each shift.

Job Requirements
- High school diploma or equivalent experience
- minimum two years of previous cook experience in a similar environment
- must be flexible regarding scheduling including nights, weekends and holidays
- must be able to obtain local or state food handling permits and serv safe certification
- successful completion of criminal background check and drug screen
- able to lift up to 40 lbs
- able to bend, stretch and twist
- able to stand for long periods
- able to work in hot or cold environments
- able to work around continuous moderate noise levels
Job Qualifications
- High school diploma or equivalent experience
- minimum two years of previous cook experience in a similar environment
- comprehensive knowledge of food preparation and sanitation
- ability to work with Point of Sale and Kitchen Display Systems
- must be flexible regarding scheduling including nights, weekends and holidays
- must be able to obtain local or state food handling permits and serv safe certification
- successful completion of criminal background check and drug screen
- completion or enrollment in culinary certification or degree preferred
- experience as a la carte, buffet line cook or resort/hotel cook preferred
- previous leadership experience preferred
- proven teamwork

Job Duties
- Maintain and follow all department operating procedures
- ensure completion of daily temperature logs, daily cleaning logs, line check sheets and food waste sheets
- ensure compliance with all food-handling and sanitation regulations
- perform food preparation tasks for all fruits, vegetables, meats, poultry, fish, etc.
- execute food orders according to guest preference in a timely manner while working on multiple orders at once
- prepare all food items per recipe guidelines, tasting and adjusting for flavor
- control recipes by weighing and measuring designated ingredients
- coordinate with main kitchen cook for daily prep, restocking, meal breaks, and end of shift cleaning
- work various stations including pantry, fryer, broiler/grill, sauté, dessert station, buffet or banquet, buffet action stations
- keep supplies and food ready by inventorying stock and requisitioning supplies
- monitor and replenish food, paper goods and small wares
- maintain appropriate levels of dishes and utensils
- maintain a safe, secure and healthy work environment by cleaning work and storage areas and following sanitation standards
- maintain and follow all Ecosure or similar food safety program standards
- keep equipment operating by performing preventive maintenance and calling for repairs
- assist and support operation at the request of the sous chef, executive chef or leadership
- communicate shift information with culinary leader at the end of the shift
