Delaware North Sportservice is seeking an experienced Executive Sous Chef to join the vibrant culinary team at J. Leinenkugel's Barrel Yard Taproom and Restaurant, located within the iconic American Family Field in Milwaukee, Wisconsin. The Executive Sous Chef role is a pivotal one, focused on overseeing the day-to-day kitchen operations, ensuring strict adherence to recipe standards, and maintaining excellence in food preparation, presentation, and menu innovation. This position is a full-time opportunity with an anticipated base salary ranging from $56,900 to $76,800 annually, complemented by an annual bonus program linked to company and individual performance or an uncapped sales incentive plan based on role metrics. The Executive Sous Chef will manage all facets of kitchen operations for events and daily service, consistently delivering high-quality culinary experiences. Job Requirements
- Minimum of 3 years of culinary management experience
- experience in high-volume food and beverage operations
- strong leadership and team management skills
- knowledge of food safety and sanitation standards
- proficient with computer applications such as Word and Excel
- ability to obtain required food safety certifications
- flexible availability to work various shifts including holidays and weekends
Job Qualifications
- Minimum of 3 years of previous culinary management experience in a quality, high-volume food and beverage operation
- exceptional skills in high-volume cooking, food presentation, and precise recipe adherence
- ability to lead, coach, and motivate a diverse team
- knowledge of best practices for monitoring food and labor cost, menu development, costing, ordering, inventory, and food safety and sanitation
- proficient computer skills, including Word and Excel
- ability to obtain ServSafe, Food Safety Handler, and Training for Intervention Procedures certifications
- capacity to work a flexible schedule to accommodate business levels
