The Restaurant Chef position at Loews Philadelphia Hotel plays a pivotal role in maintaining the high standards of the hotel's culinary operations. This role is responsible for coordinating and overseeing all members of the food production team across multiple dining venues within the hotel, including the three-meal restaurant, the lobby bar, and room service. The chef ensures that every food product meets the highest quality standards and is prepared and served punctually to enhance the guest experience. With accountability for kitchen food ordering, production, holding, and storage, the Restaurant Chef manages the entire culinary workflow and inventory control to optimize efficiency and minimize waste.

In addition to managing daily kitchen operations, the Restaurant Chef is also deeply involved in human resource functions within the kitchen. This includes the selection, training, and scheduling of all kitchen team members, ensuring that the staff is well-prepared, motivated, and aligned with the hotel's values and standards. The role involves close collaboration with front-of-house teams and event coordinators, especially during off-premise events and media relations functions, highlighting the importance of adaptability and communication skills.

The position demands a creative and strategic mindset, with the Restaurant Chef actively contributing to the creation and development of new menu concepts. The role requires testing, costing, and updating recipes regularly to keep menus innovative, attractive, and financially viable. Furthermore, the Restaurant Chef must uphold the branding elements of the foodservice outlets by ensuring consistent culinary execution and presentation. Monitoring food preparation methods, portion control, and timeliness are integral to the role to maintain uniformity and customer satisfaction.

Performance management is also a significant component of the position. The Restaurant Chef evaluates individual employee performance, identifies areas that require improvement or professional growth, and establishes goals and training programs to foster development within the kitchen team. This ensures sustained culinary excellence and a motivated workforce. The role also requires maintaining cleanliness and the state of kitchen equipment, compliance with safety regulations and emergency procedures, as well as adherence to uniform and grooming standards. The ideal candidate will have a proven track record in quality food production in upscale restaurants or hotels, supervisory experience, and demonstrated leadership capabilities. This is a full-time position demanding flexibility in scheduling, including weekends and holidays, to meet the dynamic needs of the hospitality industry.

  • five to six years experience in quality food production in an upscale hotel or freestanding restaurant
  • three plus years supervisory experience in quantity food production in an upscale hotel or freestanding restaurant
  • ACF certification as restaurant chef or culinary degree from recognized culinary institute and equivalent experience
