The Arizona Biltmore, a distinguished property within the Pyramid Global Hospitality portfolio, is an iconic resort situated in the prestigious Biltmore neighborhood of Phoenix, Arizona. Known as the "Jewel of the Desert," this expansive 39-acre resort first opened in 1929 and underwent an extensive $150 million restoration completed in 2021. The Lead Line Cook role at Renata's Hearth, located within the Arizona Biltmore, centers around delivering exceptional culinary experiences inspired by contemporary Latin cuisine with flavors from Mexico, Spain, Portugal, and Latin America, featuring southwestern ingredients and traditional cooking methods such as smoking and grilling. Renata's Hearth honors bold and creative women, offering a fresh and vibrant dining concept. The Lead Line Cook will be responsible for overseeing food production, quality control, and preparation of meat, fish, poultry, sauces, stocks, seasoning, and other kitchen components. This vital role requires maintaining high standards of consistency, cleanliness, and adherence to health regulations while working alongside a dedicated culinary team. Job Requirements

  • High school diploma or equivalent
  • at least three (3) years of cooking experience in a professional, fast-paced kitchen
  • maricopa county food handler card
  • availability to work evenings, nights, weekends, and holidays
  • strong team collaboration skills
  • ability to maintain cleanliness and abide by health department standards
  • ability to read and follow recipes with precision
  • preferred graduate of an apprenticeship or accredited culinary school
  • preferred prior hotel or resort experience
  • preferred upscale or luxury dining experience
  • preferred servsafe food handler certification

Job Qualifications

  • upscale or luxury dining experience, preferred

Job Duties

  • Sautée dishes to order following the restaurants recipes and plating guidelines
  • prepare all food items according to standard recipes and or as specified on guest check to ensure consistency of product to the guest
  • visually inspect, select and use only food items ideal cooking, in preparation of all menu items
  • maintain consistency and work as a team
  • check and control the proper storage of product, monitoring age and condition of all food items to rotate and maintain highest quality
  • keep all refrigeration equipment, storage and working areas clean and clutter free, complying with health department regulations
  • prepare daily requisitions for supplies and food items for production
  • read and employ math skills to follow recipes
