The role of Food Production Supervisor at Chukchansi Gold Resort & Casino is a pivotal leadership position within the culinary team. This position is responsible for overseeing all aspects related to food production, including supervising the preparation process, ensuring financial performance targets are met, and maintaining the highest standards of quality assurance for finished food products. The supervisor plays an essential role in staffing, training, and coordinating team members across related areas, making critical contributions to both operational efficiency and guest satisfaction.

A Food Production Supervisor will be directly involved in managing inventory and procurement by checking deliveries for quality and accuracy and ensuring proper storage and handling of all food products in compliance with health code standards. This role also requires close collaboration with sous chefs and executive sous chefs to maintain seamless communication about daily operations, special events, and shift transitions.

Supervisory responsibilities include leading dishwasher staff, stewards, prep cooks, and line cooks, with duties encompassing performance appraisals, training programs, and disciplinary actions. Additionally, the supervisor must enforce strict adherence to workplace sanitation, safety policies, and dress codes, fostering a clean and professional kitchen environment. The supervisor is expected to oversee food tasting and quality control, as well as ensure correct portioning and garnishing of dishes.

From a scheduling standpoint, the supervisor is expected to be actively present during peak service hours from 11 AM to 4 PM and again from 6 PM until closing. Post-service duties include inspecting refrigeration units, ensuring proper food rotation using FIFO methods, and organizing the kitchen to promote efficiency. The supervisor is also responsible for maintaining detailed records such as spoilage reports, waste logs, employee attendance, purchase orders, and documentation for management.

This position demands strong organizational and interpersonal skills, coupled with proficiency in MS Word and Excel, to manage operational and reporting responsibilities effectively. A successful candidate will have a background in high-volume culinary environments, ideally within hotel or restaurant settings, and proven supervisory experience.
