Within this prestigious academic framework, the Shoals Marine Laboratory kitchen on Appledore Island plays a vital role in supporting the island’s seasonal educational programs. The laboratory is situated on Appledore Island in the Isles of Shoals, Maine, and operates seasonally from May through September. It serves students, faculty, visitors, and staff within a close-knit, sustainable island community dedicated to marine science research and education. This unique environment requires all staff to work collaboratively and contribute beyond their immediate roles to maintain the sustainability and safety of the community and the facilities. Room and board are provided for island staff, who participate fully in upholding a safe, inclusive, and welcoming atmosphere for all residents and visitors.

The position of Shoals Marine Laboratory Kitchen Supervisor is a critical leadership role responsible for overseeing the entire kitchen operations on Appledore Island. This position includes managing the preparation and planning of over 20 meals per week for up to 100 residents and additional groups of visitors. The kitchen supervisor leads meal production primarily from scratch, emphasizing the use of local producers, farms, and fishers to provide hearty, healthy, and well-balanced meals. Sustainability and food waste reduction are core priorities alongside menu planning, budgeting, purchasing, and compliance with health and safety regulations. The successful candidate supervises a small core team of kitchen staff, student workers, and volunteers, ensuring a respectful and professional work environment.

Beyond culinary duties, this role involves maintaining food storage, kitchen cleanliness, and operating within Maine Department of Health regulations, FDA HACCP, and Serve Safe guidelines. The supervisor ensures exemplary customer service and transparent communication with the island community regarding food sourcing. A notable requirement includes availability for emergency response, serving as a crew member on commercial vessels, and occasionally operating small boats. The position demands excellent organizational skills, attention to detail, and the ability to thrive in a physically demanding, isolated environment. The role offers compensation ranging from $75 to $100 per meal scheduled, varying by experience, and highlights the enriching experience of living and working remotely in an educational marine setting. Job Requirements

  • Experience as a head or executive chef leading dining service teams for large groups
  • Ability to promote cooking primarily from scratch and healthy meal preparation
  • Knowledge and experience managing dietary restrictions including allergies and intolerances
  • Basic computer literacy and strong organizational skills
  • Eligibility to work in the United States
  • Ability to undergo pre-employment and random drug testing
  • Meet criminal and driving background check requirements
  • Interest in remote educational environments
  • Strong communication skills
  • Serve Safe Manager Certification or willingness to obtain
  • Valid driver’s license and safe driving record
  • Ability to serve as crew on commercial or oceanographic vessels
  • Physical capability to move and lift over 50 lbs
  • Ability to stand and move for 8-11+ hours daily
  • Willingness to assist with logistics including packing, loading, and unloading
  • Ability to work cooperatively in isolated and physically demanding environments

Job Qualifications

  • Strong organization and multitasking abilities
  • Eligibility for employment in the United States
  • Ability to participate in pre-employment and random drug testing
  • Meet University of New Hampshire hiring requirements including criminal and driving background checks
  • Interest in working in a remote educational environment
  • Good communication skills and ability to work with students, faculty, and staff in isolated settings
  • Serve Safe Manager Certificate or willingness to obtain within two weeks
  • Valid Driver’s License and safe driving record for vessel crew duties

Job Duties

  • Supervise operations of the Shoals Marine Laboratory kitchen on Appledore Island
  • Lead the planning and preparation of 20+ meals per week for Appledore Island residents and groups
  • Prepare meals primarily from scratch using local producers where feasible
  • Maintain and coordinate relationships with food suppliers emphasizing local farms and fishers
  • Supervise and schedule kitchen staff, student workers, and volunteers in collaboration with Island Coordinator team
  • Plan menus, manage dietary restrictions, food purchasing, budgeting, transportation, cleaning, dishwashing, and food storage
  • Ensure sustainability and food waste reduction initiatives
  • Comply with Maine Department of Health regulations, FDA HACCP, and Serve Safe guidelines
  • Maintain a clean and safe kitchen environment
  • Provide exemplary customer service
  • Communicate with island community about food ingredients and sources
  • Foster a safe, inclusive, and welcoming environment
  • Implement diversity, equity, and inclusion initiatives
  • Be available for consultation and emergency response while on duty and on property
  • Serve as a crew member on commercial vessels and operate small boats
  • Perform other duties as assigned
