This position is pivotal within the Shoals Marine Laboratory (SML), a seasonal residential teaching facility located on Appledore Island in the Isles of Shoals, Maine. Unique in its mission, SML supports students, faculty, researchers, visitors, and staff who come together to form a close-knit and sustainable community from May through September each year. The role of Kitchen Operations Supervisor at SML involves overseeing the complete operations of the Kitchen, which serves more than 20 meals per week to up to 100 island residents, day visitors, and special catering groups. A key focus of the position is the preparation of meals primarily from scratch using locally sourced ingredients from farms and fishers, aligning with SML’s emphasis on sustainability and reducing food waste.

Responsibilities include culinary leadership, menu planning, meticulous food purchasing, budgeting, and maintaining relationships with food suppliers. The role includes supervising a diverse team, consisting of kitchen staff, student workers, and volunteers, managing schedules, and ensuring a professional and respectful work environment. Additionally, the supervisor is accountable for compliance with health and safety standards set by Maine Department of Health, FDA HACCP, and Serve Safe guidelines to uphold a safe and sanitary kitchen. They must maintain an environment that encourages inclusion and community engagement, effectively communicating food sourcing and menu plans to island residents. The position also requires readiness for emergency response during duty hours and involvement as a crew member on commercial vessels, including small craft operation. This is a physically demanding job that calls for ability to work long hours, lift heavy items, and contribute to the community-oriented lifestyle that defines life on a remote island. Compensation for this demanding yet rewarding role is $1,900 per week, with room and board provided on Appledore Island. Job Qualifications

  • Experience as a head or executive chef leading dining services teams in execution of regular meal service for large groups of more than 50
  • Commitment to cooking from scratch when possible in a healthy manner
  • Experience managing allergy, food preferences, and food intolerances safely
  • Basic computer skills and strong organization skills
  • Attention to detail and experience managing multiple tasks
  • Eligibility for employment in the United States
  • Ability to pass pre-employment and random drug testing
  • Meet University of New Hampshire hiring requirements for criminal and driving history
  • Interest in working in a remote educational environment
  • Good communication skills and ability to work well with students, faculty, and staff in an isolated environment
  • ServeSafe Manager Certificate or willingness to obtain within first two weeks

Job Duties

  • Supervise operations of the Shoals Marine Laboratory kitchen on Appledore Island
  • Lead the planning and preparation of 20+ meals per week for Appledore Island for up to 100 residents and additional groups of day visitors and on island catering
  • Prepare meals primarily from scratch utilizing local producers for hearty and well balanced healthy meals
  • Maintain and coordinate relationships with food suppliers with emphasis on local ingredients and farms and fishers
  • Supervise and schedule all employees working in the SML kitchen including core team, student workers, and volunteers in collaboration with Island Coordinator team
  • Develop and maintain a professional team that reflects courtesy, civility, and mutual respect
  • Manage menu planning, dietary restrictions, food purchasing and budgeting, food transportation, kitchen cleaning, dishwashing, and food storage
  • Maintain a focus on sustainability and food waste reduction
  • Ensure compliance with Maine Department of Health regulations, FDA HACCP, and Serve Safe guidelines
  • Maintain cleanliness and safe operating environment of kitchen at all times
  • Provide exemplary customer service
  • Communicate with island community about food sources
  • Foster a safe, inclusive, and welcoming environment
  • Implement diversity, equity, and inclusion initiatives
  • Be available for emergency response and consultation at all times while on duty
  • Serve as crew member on commercial vessel and operator of small vessels
  • Perform other duties as assigned
