The role of the Sushi Coordinator at Hissho Sushi is an exciting opportunity for an energetic sushi chef with a passion for teaching and leadership. This position requires a dynamic individual who can effectively communicate in English and is willing to travel extensively, with travel expected to range between 75 to 90 percent of the time. The Sushi Coordinator reports directly to the Operations Manager and acts as a key liaison between corporate strategy and in-store execution. Responsibilities include assisting with the recruitment of chefs, visiting various store units for operational inspections, ensuring all sanitation and health code practices are followed, and maintaining all necessary logbooks related to food safety.
In addition to operational duties, the Sushi Coordinator is expected to engage with customers to take orders, address any issues, and educate them about company products, enhancing the customer experience and improving sales. They will also be responsible for the proper visual presentation of sushi products, preparation of sushi items according to recipe standards, and working collaboratively with the team to control costs and maintain consistency in product quality and customer service. The role also involves developing strong working relationships with retail and food service partners to ensure that Hissho Sushi continues to be the preferred supplier in the market.

Job Duties
- Assist in store opening, maintaining, and closing of sushi bar operations
- Train chefs as necessary to ensure Hissho standards are met
- Assist in the recruitment of chefs
- May visit units to inspect operations
- Understand local sanitation, health code laws, and weights and measures requirements
- Ensure all required logbooks including rice pH log and temperature logs are maintained and verified chefs
- Greet, interact, and communicate with customers including taking orders, addressing issues, and educating customers regarding company products
- Properly display and arrange visual presentation of products in sushi trays and cases
- Prepare sushi related products based on product type and recipes
- Improve sales, quality, and customer service
- Work with the team to control cost and maintain consistency
- Develop strong working relationships through our retail and food service partners' organization to ensure that our Company remains the preferred supplier of choice
