The role of R&D Baker Tourier Specialist at Bridor North America is a unique opportunity for a hands-on professional with substantial production experience. This position is not limited to bench-only tasks; it requires the individual to take products from concept through to high-volume manufacturing while maintaining true artisan quality. The specialist will be responsible for developing laminated doughs such as croissants and puff pastries, as well as Viennese pastries and artisan breads. This role involves translating traditional baking techniques into scalable, industrial processes that can be implemented efficiently within large production environments.
As a key member of the research and development team, the R&D Baker Tourier Specialist will lead and support plant trials, scale-ups, and product launches. Collaboration is central to this role, with the specialist working closely with Operations, Quality, Purchasing, and Finance teams to ensure products meet cost and performance goals. Key responsibilities also include conducting tastings, evaluating results, documenting findings, and staying ahead of trends in ingredients, techniques, and product innovation.
Ideal candidates will possess at least five years of experience in bakery, R&D, or food manufacturing, with proven expertise in producing Viennese and French-style pastries in a production environment or scaling for high-volume manufacturing. Familiarity with industrial bakery equipment and production lines is essential, along with strong collaboration, communication, and problem-solving skills. The role requires knowledge of regulatory standards such as FDA, USDA, or CFIA, and adherence to HACCP, GMP, and BRC standards.
The position is based on a day shift schedule with some flexibility to accommodate trials, including occasional travel within the United States and Canada. Job Requirements
- Degree or diploma in baking or pastry arts
- Minimum 5 years of relevant bakery or food manufacturing experience
- Proven experience producing Viennese and French-style pastries in a production environment
- Strong expertise in laminated doughs such as croissants and puff pastry
- Experience using industrial bakery equipment and managing production lines
- Ability to collaborate and communicate effectively
- Willingness to travel within the U.S. and occasionally to Canada
- Ability to work day shift with flexible hours for trials
