We are currently seeking an experienced R&D Baker Tourier Specialist to join our team in Salt Lake City. The successful candidate will play a crucial role in developing laminated doughs, croissants, Viennese pastries, and various artisan bread recipes, driving innovation on a production scale and collaborating closely with multiple departments to meet performance and cost-efficiency targets.

Responsibilities include leading plant trials, scale-ups, and product launches, translating traditional baking methods into scalable industrial processes, and maintaining a pulse on current ingredient trends and bakery innovations. Collaboration is key in this role, as the specialist will work alongside Operations, Quality, Purchasing, and Finance teams to ensure product excellence and operational performance. The position demands excellent communication, collaboration, and problem-solving skills to navigate the complexities of product development and manufacturing in a fast-paced environment. Furthermore, the role includes travel within the U.S. and occasional trips to Canada, emphasizing the expansive nature of Bridor’s North American operations.

This position requires a degree or diploma in Baking, Pastry Arts, or a related field, along with over five years of relevant experience in bakery, research and development, or food manufacturing. Hands-on expertise with Viennese and French-style pastries in a production or scale-up setting is essential, particularly strong knowledge of laminated dough systems like croissants and puff pastry. Familiarity with industrial baking equipment, food safety standards such as FDA, USDA, and/or CFIA requirements, and compliance with HACCP, GMP, and BRC standards is also crucial. The role is scheduled during the day shift but requires flexibility during trials and product launches. Candidates should be prepared for self-relocation to Salt Lake City as relocation assistance is not provided.

Job Duties

  • Develop laminated doughs, croissants, Viennese pastries, and artisan breads from concept through full-scale production
  • Translate traditional French and Viennese baking techniques into scalable industrial processes
  • Lead and support plant trials, scale-ups, and new product launches in a production environment
  • Partner closely with Operations, Quality, Purchasing, and Finance to support cost, efficiency, and performance targets
  • Conduct tastings, evaluate product performance, and document technical findings
  • Stay current on ingredient trends, bakery innovation, and process improvements
