The role of R&D Baker Tourier Specialist at Bridor North America's new facility represents a hands-on position that demands expertise in artisan baking techniques as well as the ability to translate these methods into scalable industrial processes. This role is not confined to bench-only research; it involves taking innovative bakery products such as laminated doughs, croissants, Viennese pastries, and artisan breads from concept through to full-scale commercialization in a high-volume production setting. The specialist will play a critical role in product development, production scale-up, and quality assurance, ensuring that all bakery products meet Bridor’s high standards. This position requires a deep understanding of traditional French and Viennese baking methods combined with practical experience in industrial bakery equipment and manufacturing lines.

The R&D Baker Tourier Specialist will collaborate closely with cross-functional teams including Operations, Quality Assurance, Purchasing, and Finance to support goals related to cost efficiency, product performance, and process improvements. Responsibilities include leading plant trials, conducting tastings, documenting technical findings, and staying up-to-date on ingredient trends and bakery innovations. The role demands both technical knowledge of FDA, USDA, CFIA requirements and standards such as HACCP, GMP, and BRC, as well as strong communication and problem-solving skills. Relocation to Salt Lake City is required for this position, making it a unique opportunity for those willing to embrace a new environment and challenge. Job Requirements

  • Degree or diploma in baking, pastry arts, or related field
  • 5+ years of experience in bakery, R&D, or food manufacturing
  • Hands-on experience with Viennese and French-style pastries in a production or scale-up environment
  • Strong expertise in laminated dough systems such as croissants and puff pastry
  • Experience working with industrial bakery equipment and production lines
  • Strong communication skills
  • Ability to collaborate effectively
  • Excellent problem-solving abilities

Job Qualifications

Job Duties
