Job Description

This position is for a culinary role aboard a CFCC (College of the Florida Keys Community College) training ship, deeply involved in the day-to-day preparation and service of meals for ship personnel while underway. The College of the Florida Keys Community College is a public educational institution committed to providing comprehensive educational experiences that extend beyond the traditional classroom setting. As part of their maritime education program, training voyages aboard the CFCC ship play a crucial role in offering hands-on learning opportunities for students and crew members. Working under the Captain's supervision, the culinary team helps maintain a smooth operation of onboard food services, ensuring that nutritious and well-prepared meals meet the needs of all aboard, including those with special dietary requirements such as vegetarians or individuals with specific dietary restrictions.

This employment is typically on a temporary or contract basis in line with the training voyage schedules and focuses on delivering high-quality meal preparation and kitchen maintenance on a ship, demanding good organizational skills and attention to detail. In this role, the culinary team member is responsible for preparing three meals daily while the ship is underway, ensuring the galley and pantry areas are kept clean and orderly, and managing food purchasing within budget constraints. The position requires a proactive attitude, delicate handling of food storage and handling, and the ability to adapt to the constrained environment of a ship's kitchen. The culinary staff member must also occasionally prepare meals tailored to special dietary needs, reflecting sensitivity and competence in accommodating diverse dietary preferences and restrictions.

Supervised by the Captain, the role does not involve supervisory responsibilities but demands reliable execution of duties and collaboration with other crew members. Maintaining supplies, monitoring inventory, and ensuring the stock of food and cleaning materials are sufficient and properly stored are integral to the role.

Applicants are required to hold a valid ServSafe Certification, evidencing their knowledge in proper food safety and handling procedures—a critical aspect given the confined and regulated environment of shipboard food service. In addition to certifications, candidates must submit academic transcripts and training certifications as required by the college, supporting the educational standards and qualifications for the position. Job Requirements

  • High school diploma or equivalent
  • ServSafe Certification

  • Ability to submit official transcripts before hire date
  • If educated outside the US, ability to validate academic degrees through credential evaluation service
  • Submission of DD Form 214 for veterans preference if applicable
