About the property and role:

The Wigwam is a historic Four Diamond resort located in Litchfield Park, Arizona, with roots dating back to 1929. Sprawled across 440 scenic acres, this property boasts 331 guest rooms and offers an authentic Arizona experience that combines rich heritage with modern luxury. The Wigwam is a distinctive landmark that welcomes individuals who are enthusiastic, driven, and passionate about delivering exceptional hospitality experiences.

The position at The Wigwam offers a unique chance to contribute creatively and strategically to the resort’s food and beverage operations. As part of the team, you will be responsible for developing menus that reflect seasonal availability and resonate with the property’s authentic themes. This includes managing food and beverage merchandising programs, analyzing menus for profitability and quality enhancements, and staying attuned to guest preferences and industry trends.

Moreover, the role demands creativity in crafting menus for daily service, seasonal offerings, and special events to elevate guest satisfaction. It involves forecasting purchases to maintain alignment with budgetary goals, leading initiatives in safety and sanitary production standards, and establishing clear purchase specifications. You will also oversee stewarding operations, design training programs for staff development, collaborate closely with culinary teams to demonstrate quality standards, and foster a culture of teamwork under the philosophy of "One Team."

Effective communication with the General Manager, Director of Food and Beverage, and Human Resources is vital, as is partnering with the Corporate Chef to ensure program consistency and centralization. Job Requirements

  • ACF certified Executive Chef or culinary degree from a recognized institute of culinary arts
  • Eight to ten years of experience as an Executive Chef in reputable hotels or resorts
  • Extensive menu development and costing experience
  • At least five years in multi-outlet food production management
  • Strong communication and delegation skills
  • Practical hands-on experience in all food production areas
  • Ability to mentor and retain employees

Job Qualifications

  • ACF certified Executive Chef or culinary degree from a recognized institute of culinary arts
  • Eight to ten years of experience as an Executive Chef in reputable hotels or resorts
  • Extensive menu development and menu costing experience
  • Over five years of experience in managing multi-outlet food production
  • Outstanding communication skills and leadership abilities
  • Hands-on knowledge and skills in all aspects of food production
  • Proven ability to mentor and coach staff to improve retention

Job Duties

  • Create menus which reflect seasonal availability based on the concept of the restaurant
  • Develop food and beverage merchandising programs for grab & go or other food retail elements
  • Analyze menus and procedures to improve profit and quality
  • Stay updated on industry trends and guest needs to implement changes
  • Develop daily, seasonal, and special event menus to enhance guest experience
  • Forecast purchases and maintain food cost to align with budget
  • Lead safety, efficiency, and sanitary production efforts
  • Develop purchase specifications and ensure proper food inspection and receiving standards
  • Monitor stewarding department activities and personnel
  • Design training and development plans to enhance team skills
  • Collaborate with culinary team to provide demonstrations and maintain quality
  • Create amenity programs that reflect the hotel environment with creative solutions
  • Foster a "One Team" culture to empower employees to assist any hotel guests
  • Maintain clear communication with General Manager, Director of Food and Beverage, and Human Resources
  • Partner with Corporate Chef to drive centralized programs and consistency
