The Production Team Member role at PJ Food Service is a crucial position focused on the production of high-quality dough within the company's strict specifications. This role requires meticulous attention to detail to ensure dough is prepared, handled, and stored correctly to maintain its integrity and quality. The employee will be responsible for operating and maintaining equipment in a sanitary environment, following stringent guidelines such as Good Manufacturing Practices (GMP), and ensuring compliance with all safety and sanitation regulations. This role demands teamwork, reliability, and a proactive attitude toward performance improvements and safety adherence. It also involves operational tasks like date marking of dough trays, monitoring production metrics, and cleaning duties to maintain the cleanliness of the production area. Job Requirements

  • previous experience in food production or manufacturing preferred
  • knowledge of GMP standards

Job Qualifications

Job Duties

  • Place dough balls into clean trays according to PJ Food Service standards
  • monitor productivity standards by analyzing metrics surrounding key performance indicators
  • recommend and implement ways to improve performance
  • ensure all dough trays are properly dated, stack and down-stack proper number of trays and maintain rotation practices at proper cooling temperatures
  • maintain and document Good Manufacturing Practice (GMP) standards on cleanliness and sanitation to ensure product is free of contamination or foreign material
  • presoak dough trays and process through tray washer
  • perform advanced lock out/tag out of all dough production equipment prior to cleaning and sanitizing
  • wash, rinse and sanitize all dough processing equipment and production room upon completion of production
  • document and sign off on various processes in dough production such as sanitation, rejection procedure, dough weight, etc
  • adhere to all prescribed safety practices including wearing the proper safety equipment and uniform
  • perform general housekeeping for the Quality Control Center as requested
  • operate floor maintenance equipment to clean carpets and other flooring
  • use cleaning chemicals and personal protective equipment (PPE) in a safe and proper manner
  • ensure compliance with PJFS safety standards, sanitation and HACCP policies and procedures, federal, state and local regulations (OSHA, FDA, DOL) and all Papa John’s International, Inc., policies and procedures
  • other duties as assigned
