The role of Baker 1 at Grand Central Bakery marks the entry point in a three-level baking series and represents a crucial foundation for those pursuing a career in artisan bakery production. The Baker 1 is responsible for learning and performing the production of high-quality baked goods while maintaining operational efficiency and strict adherence to the Food Safety Modernization Act (FSMA) guidelines. This position demands a high level of attention to detail and a proactive approach to continual skill enhancement in a collaborative production environment. Reporting directly to the Production Shift Manager and accountable to the Shift Lead, the Baker 1 gains hands-on experience working with various bakery equipment such as rack and hearth ovens, mixers, divisors, loaders, and other baking apparatus. The role involves working in a highly physical environment which requires standing for the entire shift, lifting and carrying heavy materials, and working with flour and grain dusts.
Compensation for this non-exempt position is $22.68 per hour, with eligibility for overtime pay. Work schedules are flexible and must accommodate weekend and holiday shifts as the bakery operates every day of the year. The Baker 1 is expected to have foundational competencies including positive team collaboration, informal communication, high standards, initiative, and adaptability to change. More specifically, the role involves the baking process from mixing, forming, fermentation, and proofing, to quality control and record-keeping of production data. Proper communication about equipment status, supply levels, and product quality with the management team is an essential part of the position.
Besides technical baking skills, the Baker 1 contributes to maintaining the company’s mission-driven culture by fostering an inclusive and anti-racist environment. Emphasis is placed on respect, professionalism, and continuous improvement. Bakers must maintain a current Food Handler's Card, ensure adherence to health regulations, and participate in safety protocols. The bakery supports training and development, enabling Bakers to advance from Baker 1 to Baker 2 upon demonstrating competence. Job Requirements
- Valid Food Handler's Card
- at least 18 years of age
- basic math skills
- ability to work weekends and holidays
- regular attendance and punctuality
- physical ability to lift up to 50 lbs and push/pull up to 200 lbs
- ability to stand for entire shift
- willingness to work flexible schedule in a 7-day per week operation
Job Qualifications
- Must be at least 18 years old
- maintains a valid Food Handler's Card at all times
- basic math skills
- professional baking experience preferred
- working knowledge of basic English preferred
- demonstrates regular attendance and punctuality
- ability to work a variety of shifts including weekends and holidays
Job Duties
- Bake, mix, form, fermentation, proofing of all products
- understands use of all equipment on bread production floor
- maintain accurate counts
- meet quality and production pace expectations as per Level 1 training requirements
- follow FSMA guidelines and maintain records and food safety goals
- perform quality control of product and report unusable loaves and shortages
- take account of mix times and dough temperatures and record results
- communicate equipment issues, supply concerns, maintenance or cleaning needs, and accurate product counts to management
- have knowledge of all bread products and describe their properties
- use checklists and training documents to produce accurate results
- communicate final product goals
- understand financial goals and impact of lost product
- work collaboratively with team and communicate respectfully
- contribute to training team members
- deliver excellent customer service
- maintain and demonstrate competencies
- actively oppose racism and promote inclusion
- follow safety requirements and report hazards and injuries
