The role of Baker 1 at Grand Central Bakery is designed as an entry-level position within their three-tier baker training program. This role is ideal for individuals passionate about artisan baking, detail-oriented, and eager to build their skills in a collaborative, production-level environment. Working under the supervision of the Production Shift Manager and Shift Lead, the Baker 1 will learn to produce high-quality artisan baked goods while maintaining efficiency and strict adherence to the Food Safety Modernization Act (FSMA) requirements. The position requires the ability to understand and operate bakery equipment, maintain accurate production records, and contribute to a reliable and safe kitchen environment.
Grand Central Bakery offers the opportunity for advancement through demonstrated competence during the training period, whereby a Baker 1 progresses to the Baker 2 level. Aside from baking duties, the role includes maintaining quality and safety standards, monitoring inventory, documenting dough temperatures and mix times, identifying and culling unusable products, and communicating critical information related to equipment and supply issues. The Baker 1 also plays a vital role in supporting the bakery's mission, vision, and values by working as a collaborative team player, delivering professional and respectful communication, and embracing principles of anti-racism and cultural inclusion.
The position requires physical stamina including frequent standing, walking, and lifting up to 50 pounds, working in warm environments with exposure to grain dust. Schedule flexibility is essential as the bakery operates every day of the year, and weekend work is mandatory. Job Requirements
- High school diploma or equivalent preferred
- Minimum age of 18 years
- Valid Food Handler's Card
- Basic math skills
- Ability to work weekends and holidays
- Ability to work in a fast-paced bakery environment
- Physical ability to stand for extended periods and lift up to 50 pounds
- Willingness to learn and follow safety and food handling procedures
Job Qualifications
- Must be at least 18 years old
- Maintains a valid Food Handler's Card and follows health department guidelines
- Basic math skills
- Professional baking experience preferred
- Working knowledge of and ability to speak and understand basic English preferred
- Demonstrated regular attendance and punctuality
- Ability to work various days and shifts including weekends and holidays
Job Duties
- Bake, mix, form, fermentation, proofing of all products
- Understand use of all equipment on bread production floor
- Maintain accurate counts
- Meet quality and production pace expectations as per level 1 training requirements
- Follow FSMA guidelines and maintain records and food safety goals
- Quality control of product, culling of unusable loaves and reporting shorts to the PIC
- Take account of mix times and dough temperatures and accurately record results
- Communicate critical information to the Shift Lead, Manager, and Delivery in a timely manner including equipment issues, supply concerns, maintenance or cleaning needs, and accurate counts of product and shortages
